It’s been a quiet week here. We’ve all been suffering from colds and other things and have spent most of our time inside. It’s good that my 5 year old is such a bookworm (even if he can’t read yet) so we read lots of books. We also went to the zoo and had fun wandering around there. This week I shared three new recipes for my Vegan March on my blog! My Roasted Eggplants stuffed with lentils are basically the perfect vegan dinner – especially when drizzled with an eggplant tahini sauce! And my Whole30 Cauliflower “Hummus” is a wonderful vegetable-based alternative to a real hummus. My Vegan Tricolor Chia Blender Pudding looks so festive and will keep you full as a snack or even breakfast!
