You guys, this week has been so warm!! I cannot get over it! We had temperatures of up to 17 degrees Celcius which just felt so good. I mean, we never really had a proper snowy winter (to the great dismay of my son) but I definitely had my share of sitting in the sun these past few days. Don’t you just love it when all the flowers come out?
This week I shared three new recipes for my Vegan March on my blog! My Mixed Vegetable Mash with Black Bean Balls is my ultimate comfort food! And I often eat those delicious airfried Everything Seasoned Eggplant Fries on the side of my dinner! My vegan & refined sugar free Blueberry Coconut Truffles were a huge hit, in particular with my husband, and are a wonderful healthy treat!
