Super Easy Rocky Road Cookies

These cookies are LIFE. Like, I'm serious. They were gone in what felt like minutes (probably was minutes)! I had to make a second batch which also instantly disappeared. They're insanely delicious, especially when they're still a little bit warm and the chocolate is all gooey. Most of the marshmellows sort of just evaporate leaving behind this caramelized bit of sugar which makes these cookies even better!

Rocky Road is not a flavor that's at all common or available over here in Germany. The one and only time I actually had something called Rocky Road (Ice cream in that case) was in Chicago. It was at Ghirardelli and it was SO good! It was at least ten years ago that I ate it and I still remember it fondly. Recently, my husband and I have been talking about wanting to fly to Chicago in the near future. I remember the city so lovingly and he's never been so that's a good enough reason to go. I remembered the ice cream and that's how these cookies started!

Rocky Road is basically marshmallows, nuts and chocolate. It's mostly known as an ice cream flavor and was apparently one of the first ice creams flavors to include mix ins. And it's still very popular! I mean, what's not to love? Chocolate, nuts and marshmallows are all ingredients that taste amazing! I love nuts! My favorite nuts are walnuts and hazelnuts but in this case I used a mix of peanuts and almonds. Almonds are fantastic in cookies in my opinion (and as a nut milk and nut butter too!).

For chocolate, I used semi dark chocolate. You could also go for dark dark chocolate but I wouldn't recommend using milk or white chocolate. The cookies are quite sweet and using dark chocolate makes for a nice and necessary counterbalance. Even my son who would always choose milk chocolate was nuts for these cookies and didn't realize or mind it.

When you take the cookies out of the oven, they will still be very delicate and you have to handle them carefully. Best leave them on the baking tray for a few minutes before you transfer them to a cooling grid. Or - if you're like us and can't wait - just eat them carefully when they're still warm. So good!

Description

Ingredients
  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 pinch salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • 2/3 cups mini marshmallows
  • 1/3 cup chopped mixed nuts (almonds & peanuts)
  • 1/3 cup chopped semi dark chocolate
Instructions
  1. Pre-heat oven to 180°C (356°F). Cover a baking tray with parchment paper. 

  2. Cream together softened butter and brown sugar. 

    Add 2 eggs, one egg at a time and mix in well. 

  3. In a separate bowl, mix together flour, baking soda, baking powder and salt. 

    Mix wet with dry ingredients until just combined. Add mini marshmallows, chopped dark chocolate and chopped mixed nuts and fold them in. 

  4. Add 1 heaped tbsp of cookie dough to the baking tray for each cookie. Bake for 10 minutes. Let cool off. Enjoy!
