Vegan Gluten Free Apple Oat Cookies

These healthy refined sugar-free cookies are so yummy and easy to make! They're vegan and gluten free and will be a new favorite for your kids! Drizzle with white chocolate if you don't mind the extra sugar!

These oat cookies were a fun result from my 5 year old son's leftover muesli one morning! Sometimes his eyes are much bigger than his tummy and he's already full after half of his bowl of muesli. But I am very much against throwing away leftovers so I always try to turn leftovers into something else. I have turned leftover muesli into cookies before but it was always a bit of a throw this and that in and see how it turns out.

But this time I made cookies with the intent of posting them on my blog! As you can see, these cookies turned out so well and I promise they were gone very quickly. They're also super healthy - at least until you cover them with white chocolate. The cookie dough generally contains no refined sugar but I used maple syrup and unsweetened apple sauce instead. So it really is up to you if you just want to them as they are straight out of the oven (well, maybe wait to a bit to not burn your mouth) or if you wanna drizzle white chocolate on them still. I would go for the white chocolate but that's just me!

Since there obviously wasn't enough muesli left for so many cookies, I soaked two cups of quick-cooking oats in almond milk for 1.5 hours. And I also added raisins and chopped almonds but you could definitely substitute them for other dried fruit and / or nuts. I can imagine walnuts or hazelnuts being very yummy as well - I love both of those nuts a lot! What are your favorite nuts?

After you've soaked the oats and other ingredients, the rest of the cookie making process is super quick. Just mix in your chopped nuts and baking powder and then scoop out uniform cookies! I like using a cookie scoop so you can ensure your cookies are all about the same size. That way, when baking you won't end up with some overbaked and some underbaked.

Just looking at these photos now makes me want to bake those cookies again! I absolutely love that they're gluten free since I don't eat much gluten these days. And that they're vegan too. So many cookies - especially the store-bought ones - contain so much sugar and unhealthy ingredients. I don't want my son to grow up eating those (or at least not a lot of those) so I love creating healthy delicious recipes for him.

Description

Ingredients
  • 2 cups quick-cooking oats (gluten free)
  • 1 cup almond milk
  • 1 teaspoon ground cinnamon
  • 1/8 cup maple syrup
  • 1/4 cup unsweetened apple sauce
  • 1/3 cup raisins
  • 1/3 cup chopped almonds
  • 1 teaspoon baking powder
  • 50 grams vegan white chocolate
  • powdered sugar (optional)
Instructions
  1. Mix quick cooking oats, almond milk, maple syrup, ground cinnamon, unsweetened apple sauce and raisins together well. Let stand for 1.5 hours. This is necessary for the oats to soak up the liquid and become soft. 

  2. After 1.5 hours, pre-heat oven to 180°C (356°F). Cover a tray with parchment paper. 

    To the oat mixture, add chopped almonds and baking powder. Mix well. 

  3. Make uniform cookies using a cookie scoop (e.g. equalling 1 tbsp) and place them on to the baking tray covered with parchment paper. The dough will be quite soft. 

  4. Bake at 180°C (356°F) for 15 minutes. 

    In the meantime, melt the vegan white chocolate in a water bath or in the microwave. Drizzle the cookies with white chocolate and wait for the chocolate to harden. Dust with powdered sugar if you like. Enjoy!
