Vegan Apple Pudding Muffins

These vegan muffins are healthy and delicious! They’re super fluffy and full of apple flavor from the apple sauce and the apple pieces! Your kids will love them!

What makes these muffins pudding muffins, you ask? Well, I added vanilla pudding powder to the batter and trust me, it’s such a game changer! They came out SUPER fluffy!! Like so so so fluffy! One of my son’s friends was at our place and ate one of them. Upon biting into it, he shouted SO FLUFFY!! It was hilarious!

Here in Germany, you can buy unsweetened pudding powder at any shop. They generally don’t contain any sweetener which I love because I like being able to adjust the level of sweetness when I make pudding. Sometimes I also use maple syrup or agave nectar instead of sugar and it’s so good! Anyways, the pudding powder mix I use is this one. It only contains corn starch, salt, aroma and natural colorants. So you get the fluffy texture and the light taste of vanilla in the muffins which is just great!

Apple muffins are such a classic flavor that you can enjoy them all year round! We always have apples at home since it’s one of the few fruit that my son actually likes. He’s generally kind of picky when it comes to food and fruit are no different. He likes apples, mango and (some) berries. That’s kind of it. So if I want to include fruit in my recipes (and I want him to try it) then I have to stick with those. I do like apples too though I prefer the sour ones to the sweet ones.

What’s lovely about these muffins is that they’re actually pretty healthy! I used spelt flour instead of all purpose flour. And I also used apple sauce so I could omit eggs (making them vegan too). I love making dishes that taste great but since you know it’s a healthier version of the “original”, it’s fine for your kids to eat more than one. My son and his friends definitely loved those so that’s a double win!

Vegan Apple Pudding Muffins

Instructions

  1. Pre-heat oven to 180°C (356°F). Grease a muffin form. 

  2. Add coconut oil and sugar to a bowl and beat with a handmixer. Add apple sauce and vanilla pudding and mix well. Add spelt flour, salt, baking powder and baking soda and mix until just combined. Add a splash of almond milk if necessary and mix in. 

  3. Peel and core apple and cut into small cubes. Fold into the dough. Divide the dough among 9 muffin forms and bake at 180°C (356°F) for 18 - 20 minutes. Let cool off on a cooling rack. Enjoy!
