Black Forest Dutch Baby Pancake

This delicious puffed up pancake is filled with a fresh cherry compote, lots of whipped cream and chocolate shavings! It’s easy to make and super delicious!

Lately, my family cannot get enough of Dutch baby pancakes! And since they’re so easy and quick to make, I’ve been coming up with lots of different variations for them. Plus, the pancake is super fun to watch through the oven door when it puffs up! At least my almost 6 year old thinks so…

For this recipe, I was inspired by the Black Forest cake. It’s a very traditional German cake which consists of several layers of chocolate sponge cake. In between the cake layers are whipped cream and cherries and then it’s topped with more whipped cream and chocolate shavings. So good! If you have never had this cake, please find one and try it!

Since it’s still cherry season over here (and I love cherries), I definitely wanted to use fresh cherries. But for some reason, my youngest isn’t mad about cherries (or most fruit to be honest). However, when my sister recently made a Black Forest cake, he LOVED the cherries. He told me he likes cooked cherries but not fresh ones. So I cooked my fresh cherries down with some water and lemon juice to create a kind of cherry compote.

I didn’t add any additional sweetener because after tasting them, I realized that my cherries were particularly sweet! For eating them just like that, I prefer them a bit more tart but for this recipe, it was great. If your cherries aren’t so sweet, I suggest you add some sugar or agave nectar to the cherries when cooking them.

After I added the coooked cherries onto the pancake, I added lots and lots of freshly whipped cream. And chocolate shavings. Yum!! Since it was a particularly hot day (and the pancake was still warm), my whipped cream melted rather faster than I anticipated. It tasted amazing though because everything was saucy and creamy. However, if you don’t want your cream to melt, rather wait until the pancake is fully cooled down!

Instructions

  1. Stone the cherries. 

    Add to a pot together with 1/2 cup water and lemon juice. Bring to a boil, then reduce the temperature and simmer for 20 minutes. 

  2. Mix together cornstarch and 1 tbsp water. Whisk well. Add to the cherries together with 2 tbsp water and mix in. Simmer for one minute until the sauce thickens. Remove from the heat and let cool off. 

  3. In the meantime, whisk cream until peaks form. 

  4. Pre-heat oven to 230°C (446°F). Put your cast-iron pan in the oven while it heats up. Once oven is hot, add oil to the pan and wait for one minute. 

  5. In a bowl, mix together eggs, salt and all purpose flour. Slowly add in milk until it becomes one smooth batter. 

  6. Pour batter into the middle of the pan and bake for about 15 minutes until the pancake is puffed up. 

  7. Take the pancake out of the oven and let cool off for 10 minutes. Top with the cherries, whipped cream and chocolate shavings. Enjoy!
