Tricolor Chia Blender Pudding

Description

This vegan and refined sugar free treat can either be the best breakfast or a wonderful, filling and healthy dessert! The three layers of berry, coconut and mango work wonderful together!

Ingredients
    Preparation
  • 3/4 cups chia seeds (to be blended)
  • For the berry layer
  • 3/4 cups mixed berries (I used blackberries, raspberries and blueberries)
  • 1/2 cup almond milk
  • 1 tablespoon date syrup
  • 1/2 cup blended chia seeds
  • For the banana coconut layer
  • 1/4 cup coconut milk
  • 1/4 cup almond milk
  • 1 small banana
  • 1/4 cup blended chia seeds
  • For the mango layer
  • 1 cup mango chunks
  • 1/2 cup coconut milk
  • 1/2 cup blended chia seeds
  • For topping
  • fresh blueberries
  • grated coconut
Instructions
  1. Add 3/4 cups of chia seeds to a blender and blend for about one minute until they resemble a flour. It will make about 1 1/4 cups of blended chia seeds. 

  2. For the berry layer: 

    To a blender, add mixed berries, almond milk, date syrup and - at the very end! - blended chia seeds. Start blending immediately because the chia seeds will start absorbing the liquid and get clumpy otherwise. Blend until smooth. 

    Add to a small jar or bowl. 

  3. For the banana coconut layer:

    To a blender, add coconut milk, almond milk, banana and - at the very end! - blended chia seeds. Start blending immediately because the chia seeds will start absorbing the liquid and get clumpy otherwise. Blend until smooth. 

    Add on top of the berry layer. 

  4. For the mango layer: 

    To a blender, add mango, coconut milk, and - at the very end! - blended chia seeds. Start blending immediately because the chia seeds will start absorbing the liquid and get clumpy otherwise. Blend until smooth. 

    Add on top of the banana coconut layer.

  5. Pile fresh blueberries on top of your three layers and top with grated coconut. 

    Either eat immediately or add to the fridge for 30 minutes. Enjoy!
