Tricolor Chia Blender Pudding

This vegan and refined sugar free treat can either be the best breakfast or a wonderful, filling and healthy dessert! The three layers of berry, coconut and mango work wonderful together!

So let's start off with chia. What are chia seeds? They are tiny white or black seeds whose consistency changes to gel-like when mixed with liquids like plant-based milk. They also have lots of great health benefits such as being an excellent source of antioxidants, and are high in several nutrients like calcium, phosphorus, and magnesium.

Now that you know about chia seeds, have you also heard of chia pudding? It's been a trend for a few years now, often eaten for breakfast or as a snack! And did you know there's actually two kinds? There's the one kind of chia pudding which is basically whole chia seeds soaked in any kind of milk. That's how I used to make it - I added cacao powder and maple syrup though. And then there's another kind that you make by blending the chia seeds first, which is the one in this recipe here!

I had been wanting to try chia blender pudding for YEARS but my old blender wasn't strong enough and so it never worked out. The chia seeds just spun around for ever without any effect! So the key is definitely a strong blender! My darling husband gave me a strong blender (included in a machine which can do much more! Fun!!) for Christmas and I have been experimenting a lot. I already posted this delicious Chocolate Chia Blender Pudding last month which I LOVE. So now it's time for another fun recipe!

If you're like me and you love different flavors of ice cream in one cone or going to a buffet because you can never decided on one dish only, this chia pudding is for you. Three flavors in one! Hurray! The bottom layer is a berry flavored chia pudding, the middle one a banana coconut layer and the top layer is mango! This dessert / breakfast is so fun to look at (and delicious of course). It is, however, very filling. I ate this for lunch after I made it and I was full until dinner time. So I think it would be a better breakfast than dessert to be honest!

Making this chia pudding is not difficult at all (provided you have a strong blender). You start off by blending all the chia seeds and than dividing it up into three portions. Then you mix the first portion with all the ingredients for the berry layer and add it to a jar or a bowl. After that you repeat the same with the ingredients for the banana coconut layer. And last comes the mango layer. Top it all with fresh blueberries and grated coconut. You can eat it straight away or keep it in the fridge for a bit.

Ingredients
    Preparation
  • 3/4 cups chia seeds (to be blended)
  • For the berry layer
  • 3/4 cups mixed berries (I used blackberries, raspberries and blueberries)
  • 1/2 cup almond milk
  • 1 tablespoon date syrup
  • 1/2 cup blended chia seeds
  • For the banana coconut layer
  • 1/4 cup coconut milk
  • 1/4 cup almond milk
  • 1 small banana
  • 1/4 cup blended chia seeds
  • For the mango layer
  • 1 cup mango chunks
  • 1/2 cup coconut milk
  • 1/2 cup blended chia seeds
  • For topping
  • fresh blueberries
  • grated coconut
Instructions
  1. Add 3/4 cups of chia seeds to a blender and blend for about one minute until they resemble a flour. It will make about 1 1/4 cups of blended chia seeds. 

  2. For the berry layer: 

    To a blender, add mixed berries, almond milk, date syrup and - at the very end! - blended chia seeds. Start blending immediately because the chia seeds will start absorbing the liquid and get clumpy otherwise. Blend until smooth. 

    Add to a small jar or bowl. 

  3. For the banana coconut layer:

    To a blender, add coconut milk, almond milk, banana and - at the very end! - blended chia seeds. Start blending immediately because the chia seeds will start absorbing the liquid and get clumpy otherwise. Blend until smooth. 

    Add on top of the berry layer. 

  4. For the mango layer: 

    To a blender, add mango, coconut milk, and - at the very end! - blended chia seeds. Start blending immediately because the chia seeds will start absorbing the liquid and get clumpy otherwise. Blend until smooth. 

    Add on top of the banana coconut layer.

  5. Pile fresh blueberries on top of your three layers and top with grated coconut. 

    Either eat immediately or add to the fridge for 30 minutes. Enjoy!
