Blueberry Yogurt & Oatmeal Bowl

This healthy vegan and refined sugar-free breakfast bowl fulfills all my dreams! It's creamy, delicious and just so beautiful to look at! Your kids will love it too!

A while ago I came across an Instagram post by this lovely lady. She regularly makes great smoothie bowls and paints with colored yogurt in her bowls! One time, she combined oatmeal and yogurt and I remember thinking that's kind of odd. I couldn't imagine it tasting any good to be quite honest!

Until I tried something like that at home. And loved it. I wasn't the only one who loved it, my son (who is not huge into oatmeal now that he's almost six years old) tried to eat up my whole bowl! He was a little breakfast thief and then asked me to make a second portion of this RIGHT NOW so we can share it again. He literally never does that so I knew it was good!

For my version I used my regular vegan refined sugar free oatmeal that I love and make on a regular basis. And for the topping I used a plant-based yogurt - in my case it was this natural coconut yogurt which I truly love and could eat all the time. The color (and yummy taste) comes from this wild bilberry powder! Bilberry is also called the European blueberry and they're smaller, darker and very flavorful.

I've used the bilberry powder in several recipes already like my Blueberry Coconut Truffles with Carob and Vegan No-Bake Blueberry Cheesecake. I cannot recommend it enough, the flavor is so intense and it tastes absolutely amazing! I also added a bit of maple syrup to my yogurt mixture because the oatmeal itself is not very sweet.

Since toppings are always fun in my opinion, I added some fresh blueberries, physalis (which I love!!) and hemp seeds on top. I love how colorful this breakfast is and how healthy as well! What would you add as a topping?

Description

This healthy vegan and refined sugar-free breakfast bowl fulfills all my dreams! It's creamy, delicious and just so beautiful to look at! Your kids will love it too!

Ingredients
    Porridge
  • 1/2 cup quick-cooking oats
  • 1 cup boiling water
  • 1 pinch salt
  • 1/2 cup almond milk
  • 1/2 tablespoon maple syrup
  • 1/2 tablespoon hemp seeds (optional)
  • fresh berries (optional)
  • Blueberry Yogurt
  • 1/4 cup plant based yogurt
  • 1/2 teaspoon wild blueberry powder (see notes)
  • 1/2 tablespoon maple syrup
Instructions
  1. Mix your quick cooking oats with 1 cup of boiling water and the pinch of salt. Set aside for 5 minutes. 

  2. When the 5 minutes have passed, add almond milk and maple syrup to the oats and cook for 5 minutes on medium heat until creamy. Stir every now and then to make sure they don't stick to the bottom of the pot. 

  3. In the meantime, mix together yogurt, blueberry powder and maple syrup really well. 

  4. Pour the oatmeal into a bowl and top with the blueberry yogurt mixture, fresh blueberries (or other berries) and some hemp seeds. Enjoy!

The bilberry (Vaccinium myrtillus/Myrtilli fructus), with its eponymous fruit, belongs to the heather family (Ericaceae). It is native to the temperate climate zones of northern Europe and Asia and prefers semi-shady locations such as deciduous and coniferous forests. Its blue colour is due to the high proportion of secondary phytochemicals it contains. The powder is particularly full-bodied and fruity with an intense violet colour.
