Chocolate Cauliflower Porridge Recipe

Every now and then, I like to do a week or two of Whole30 or just no/ low carb food. For me, it's a nice way to "cleanse" the body. Eating healthy and yummy food is definitely my passion but I will also eat the occasional ice cream or regular bread. However, what I used to miss most during those low carb weeks, was a warm and comforting breakfast. Don't get me wrong, eggs have their place (and a good one at that) but I'm somehow always more drawn to something creamy and warm that I can eat with a spoon. Yum!

When I was a child, I was the funny one who didn't want the customary slice(s) of bread with butter and jam. By the way, butter underneath jam? Yay or nay? In Germany in the 1980s, it was quite common to have whole wheat bread with cheese, some kind of sausage or jam for breakfast. Or if you wanted to go down the healthier route, there would be muesli with milk. Maybe some kind of cornflakes. Definitely not my kind of breakfast!

But my mum (bless her heart!) was super kind when it came to food and accepted that her daughter didn't like any of these things and that I somehow needed a warm breakfast. Porridge was completely unknown at that point, at least in my family. So my mum made me soup with little noddles for breakfast. You know the kind - shaped like stars or letters. I loved it! But that was then. Nowadays I crave other warm breakfasts and my go-to is always porridge. And while I love oatmeal porridge, I will show you a tasty, healthy and most importantly grain-free alternative here!

Instead of oats I am using...CAULIFLOWER RICE! I know, sounds kind of weird, right? My family have given me very confused looks when I came into the lounge with what looked like a steaming bowl of oatmeal and told them it's cauliflower porridge. I gotta tell you, it's kind of fun to confuse them! One morning my 5 year old son even got cross with me and told me that he would have also wanted oatmeal and why did I not make any for him! When I explained to him that it wasn't oats but cauliflower rice, he couldn't believe it!

I have been making this wonderful Chocolate Cauliflower Porridge for breakfast so many times this year already I have lost track. To be honest, I crave it more than a regular oatmeal porridge at this point. I know. How is that possible? It's just so creamy and yummy and I am seriously addicted. I have recommended it to my friends but didn't have a recipe to give them so I decided to make it one of my first blog posts. Priorities, you know!

Ingredients
  • 2 cups frozen cauliflower rice
  • 1 cup unsweetened almond milk
  • 1.5 tablespoon unsweetened cacao powder
  • 1 banana (half of it mashed, the other half in slices)
  • 1 teaspoon cinnamon
  • 0.5 teaspoons (heaped) almond butter
  • 1 tablespoon cacao nibs (optional)
  • 1 tablespoon hemp seeds (optional)
  • berries (e.g. raspberries) (optional)
Instructions
  1. Chocolate Cauliflower Porridge ingredients in pot

    Add the cauliflower rice, almond milk, mashed 1/2 banana, cinnamon, almond butter and cacao powder to a medium-sized pot. 

    You will not be able to mix it all at this point because of the frozen cauliflower rice.

    Bring to a boil and mix everything together. Lower the temperature to medium heat. 

    It will look very "soupy" at this point but don't worry, the cauliflower needs all the liquid in order to get soft and creamy when finished.

    Cook at low-medium heat for 15-20 minutes or until almost all the liquid has been absorbed. The cauliflower rice should be very soft and the texture of the porridge should be creamy.

    Pour into a bowl and serve the porridge topped with the other half of the banana (sliced), cacao nibs, berries and - if you like - a drizzle of almond butter. 

    I find raspberries or blueberries work the best with the flavors of this porridge!
Note
  • Cauliflower rice: I have not tried this with fresh cauliflower rice, only with frozen so I recommend using frozen. If you cannot get frozen cauliflower rice in your area, you can also grate a fresh (the fresher, the sweeter the taste!) cauliflower finely and freeze it in portions. Here's a good explanation on how to make cauliflower rice yourself. 
  • Banana: the banana should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe. 
  • Sweetener: this porridge doesn't contain and additional sweetener. I find it sweet enough with the sweetness of the banana. Also, the almond butter gives it an extra level of sweetness. But of course, feel free to add some maple syrup or any sweetener of your liking.
