Cherry Oatmeal with a Chocolate Center

This healthy-ish vegan cherry oatmeal with a hidden chocolate centre is such an indulgent yet healthy and delicious breakfast! It's so good with the fresh cherries that are currently in season!

It's been a while since I created a new oatmeal recipe for all you oatmeal lovers out there! And just like my Rhubarb Oatmeal, this is also a seasonal one. Cherries are still full on in season and I'm here for it! Cherries are among my favorite fruit and I've been enjoying them so much. Most of the times, I just munch of them as a snack though... what's your favorite way of eating cherries?

And since I normally just snack on cherries, I definitely wanted to create a few recipes using them in other ways. So this is my first one and it's definitely a super delicious way of starting your day! The best part for me is the hidden chocolate center and of course the contrast of the fruity, slightly tart cherries and the chocolate. That's always a win in my eyes! Chocolate and cherries just go so well together!

Since I love a bit of texture and crunch, I also added cacao nibs on top. Cacao nibs are one of my favorite things to add on oatmeal or smoothie bowls! Some people are confused by them because they expect them to taste like chocolate which they obviously don't. Cacao nibs are the broken apart cacao bean after it's been harvested, fermented and roasted. And before - depending on which kind of chocolate - cacao butter, sugar and milk powder are added. But I truly love cacao nibs and their bitterness.

Since the chocolate center has been pre-cooled in the fridge and is hidden under half of the oatmeal mixture, you don't see it until you insert your spoon into this delicious bowl of oatmeal! Which is part of the fun! That chocolate sauce that suddenly covers your entire oatmeal... mmmmmmmh. So so good! I cannot decide what I love more - mixing it all together or taking a little bit on each spoon. Either way, it's delicious!

Description

This healthy-ish vegan cherry oatmeal with a hidden chocolate centre is such an indulgent yet healthy and delicious breakfast! It's so good with the fresh cherries that are currently in season!

Ingredients
  • 1/8 cup coconut milk
  • 1 teaspoon maple syrup
  • 1 tablespoon unsweetened cacao powder
  • 1/2 cup quick-cooking oats
  • 1 cup boiling water
  • 1 pinch salt
  • 1/2 cup almond milk
  • 1 tablespoon maple syrup
  • 1/2 cup cherries (stoned)
  • cacao nibs (optional)
  • grated coconut (optional)
Instructions
  1. Mix together coconut milk, maple syrup and unsweetened cacao powder. Mix well, then put in the fridge for 25 minutes. 

  2. Mix your quick cooking oats with 1 cup of boiling water and the pinch of salt. Set aside for 5 minutes. 

  3. When the 5 minutes have passed, add almond milk, maple syrup and stoned cherries to the oats and cook for 5 minutes on medium heat until creamy. Stir every now and then to make sure they don't stick to the bottom of the pot. 

  4. Add half of the oatmeal mixture to a bowl. Take the chocolate coconut mixture out of the fridge and shape it with a spoon to be more compact. Add to the middle, then add the rest of the oatmeal on top. 

  5. Sprinkle with caco nibs and grated coconut. When you dip your spoon in the middle of the oatmeal, the now molten chocolate mixture will spread all over like a sauce. Enjoy!
