Chocolate & Almond Overnight Oats

These overnight oats are an almond lover’s dream! Almond milk, almond yogurt, almond meal and almond butter as well as dark chocolate chips turn them into the best and filling breakfast. It’s also vegan and refined sugar free and so tasty!

Overnight oats are not really a new phenomenon. We have been – on and off – eating something called Bircher Muesli for years which is in essence the same thing. Muesli (normally oats, nuts and dried fruit) soaked in liquid over night to make everything soft. Very easy to make and very tasty. It originated in Switzerland about 120 years ago and is quite common here in Germany.

Fast forward to a few years ago when recipes for overnight oats popped up all over the place! I also ate them a few times, especially after giving birth to my now 5 year old. Overnight oats are easy to make, ready to eat when you wake up (especially if preparation with a very small baby makes it difficult) and are healthy. Plus oats are generally known to increase the production of breast milk so double win.

Somehow, when my baby grew bigger and bigger, I forgot about the existence of overnight oats. I guess this was helped by the fact that my son didn’t like them and preferred warm porridge. So porridge it was and you all know how much I love porridge! But recently a few overnight oat recipes popped up on my Pinterest feed and I was reminded how much I loved it years ago.

So this is my spin on overnight oats. Quite the decadent looking breakfast, right? But super healthy nevertheless. It contains almond milk, almond yogurt, almond meal AND almond butter. Almond overload!! Fun fact is that I don’t even like whole almonds but love almond products! Weird, right? Anways, other than that, it contains oats, maple syrup, chia seeds and dark chocolate chips. And then topped with more almond butter, unsweetened cacaco powder and dark chocolate shavings. It is SO good!! I need to make this again very soon cause I absolutely devoured it.

Instructions

  1. In a jar, mix oats, almond milk, almond yogurt, almond meal, chia seeds, maple syrup and dark chocolate chips together very well. 

    I like chopping the chocolate chips even smaller but that's not a necessity!
  2. Close the jar and put it in the fridge overnight or at least for 8 hours. 

  3. You can eat it straight out of the jar or dish it up in a bowl. Either way, top it with almond butter, dark chocolate shavings and some unsweetened cacao powder. Enjoy!
