This vegan oatmeal is everything you want for breakfast! It’s creamy and warm, sweetened with maple syrup and banana, deliciously flavored with creamy homemade peanut butter and has a hint of chocolate.
By now, you probably know that I’m the biggest lover of porridge! Oatmeal in particular is such a comforting warm way to start the day, especially now that we are having snowy days. For me, there’s nothing better then dipping your spoon into a steaming hot bowl of oatmeal. In particular if it’s topped with more yummy ingredients!
This version with peanut butter and banana is my go-to oatmeal porridge these days! I just love how simple and fast this is, not to forget delicious! It’s creamy and warm, nutty from the peanut butter and the banana brings the perfect sweetness. For me, it’s even more perfect when dusted with a bit of unsweetened cacao powder. I generally love adding some cacao powder because it balances the sweetness.
What I love about this recipe is how fast you can make this. Ten minutes and you’re ready to eat! And who doesn’t have ten minutes in the morning? You can start soaking the oats and chia seeds for 5 minutes while taking a shower. Unless you like long showers. To me, long showers are somehow a waste of my precious time but some of the members of my family seem to disagree about that…
Then after they have soaked for five minutes, you can add the almond milk, peanut butter, mashed banana and maple syrup and get dressed while it simmers for five more minutes. And your delicious, healthy vegan breakfast is ready to eat! I love mine topped with the rest of the banana, some cacao powder and more peanut butter. Because peanut butter is life! Most Comforting Vegan Oatmeal

This vegan oatmeal is everything you want for breakfast! It's creamy and warm, sweetened with maple syrup and banana, deliciously flavored with creamy homemade peanut butter and has a hint of chocolate.

Mix your quick cooking oats with 1 cup of boiling water, the chia seeds and the pinch of salt. Set aside for 5 minutes.

Mash half the banana.
When the 5 minutes have passed, add almond milk, mashed banana, peanut butter and maple syrup to the oats and cook for 5 minutes on medium heat until creamy. Stir every now and then to make sure they don't stick to the bottom of the pot.

Cut the other half of the banana into slices.
Pour the oatmeal into a bowl and top with the other half of the banana and more peanut butter. Dust with unsweetened cacao powder if desired. Enjoy!
