Peanut Butter & Raspberry Cauliflower Porridge Recipe
Porridge is one of my go to breakfasts. You probably know at this point that I LOVE breakfast. In summer weather, I especially crave cold food like smoothie bowls and in winter it’s warm food like porridge. When I was a kid, I really didn’t like a sweet start into the day and it just had to be savory food. Back then, in Germany in the 1980s, it was very common to have a slice of whole wheat bread with cheese or sausage for breakfast!
Now though I really don’t fancy a savory start into the day! Isn’t it funny how things change? Oh wait, that is unlike you’re talking brunch food. Cannot beat eggs and bacon at a brunch buffet! But anyways, my usual go to breakfast is porridge. Or smoothie bowls. What is yours?
Oatmeal is wonderful and I love to eat it for breakfast. But for the days when I don’t want to eat carbs and still enjoy something creamy, sweet and delicious for breakfast, using cauliflower rice instead is a worthy alternative for oats. Just make sure you cook it long enough so that it’s all creamy and soft. You don’t want to bite on a crunchy piece of cauliflower…
Maybe you’ve already tried my Chocolate Cauliflower Porridge that I posted a while back? This recipe has more of a summery feel to it because of all the raspberries but it’s just as good. And I’m sure that you all know how much I love using peanut butter in my recipes! There’s a reason I make a new batch pretty much once a week… in case you haven’t tried making your own peanut butter, it’s a gamechanger.
Just like a lot of my recipes, this one is easy to make. But of course, it will still take a bit longer than regular oatmeal because again…crunchy cauliflower is not what you want here. But you can do something else in the meantime and just stir every now and then to make sure the porridge doesn’t stick to the pot.
And after it’s done, you can top it with all the goodies. You know me and toppings. I like to top mine with hemp seeds, some grated coconut and more raspberries. Yum!
I love that this breakfast is packed full of good things. Cauliflower for your daily veggie intake, raspberries and banana for your fruit intake, almond milk, grated coconut and peanut butter for protein and fat. And of course I love the way it tastes so it’s a win win.

Peanut Raspberry Cauliflower Porridge

Peel and mash the banana.

Add cauliflower rice, raspberries, peanut butter, almond milk, vanilla essence, peanut butter, salt, grated coconut and banana to a pot and stir together.

Bring to a boil, then lower the temperature to medium. Cook at medium temperature for about 20 minutes until the mixture is creamy and soft.

Pour into a bowl and serve the porridge topped with hemp seeds, more grated coconut and more raspberries. Enjoy!
Note
- Cauliflower rice: I have not tried this with fresh cauliflower rice, only with frozen so I recommend using frozen. If you cannot get frozen cauliflower rice in your area, you can also grate a fresh (the fresher, the sweeter the taste!) cauliflower finely and freeze it in portions. Here's a good explanation on how to make cauliflower rice yourself.
- Banana: the banana should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe.
- Sweetener: this porridge doesn't contain and additional sweetener. I find it sweet enough with the sweetness of the banana. Also, the almond butter gives it an extra level of sweetness. But of course, feel free to add some maple syrup or any sweetener of your liking.
