Strawberry Baked Oats

With strawberry season in full force, this is the perfect healthy breakfast for you! It will seem like an indulgent sweet treat but it’s full of good ingredients and will fill you up for the whole morning!

Did somebody say cake for breakfast? Count me in! Pssst… it’s not really cake, it’s better! And for sure healthier too. You won’t get that crazy sugar high after an (admittedly delicious) piece of cake early in the morning. But you will feel like you ate a delicious sweet treat nevertheless! Strawberry season is in full force here in Germany. There’s strawberries everywhere! Which reminds me that I have to check if the strawberry fields close to us are open for picking yet! That’s just so much fun! And eating the freshly picked strawberries still when they’re still warm from the sun is the best. We have been going with my soon to be 6 year old since he was very small and he just loves it. Have you picked your own strawberries before?

I have got lots of delicious strawberry recipes lined up for you guys this month and this is the first one. These strawberry baked oats are full of little delicious pieces of strawberry in the oat mixture itself and are also topped with strawberry jam! And more strawberry. There can never be enough strawberry!!

This is so easy to make. It only requires a handful of ingredients which you have to put in a blender to make your batter. Then you have to add your add-ins, which is the chopped strawberry in this case. Easy peasy. After pouring the batter into your oven-proof dishes or ramekins, you bake it to perfection. That is, depending on how you like it. The longer you bake it, the more cake-like it will become. If you bake it for 18 minutes, it will still be gooey. If you bake it for 20 minutes, it will be sort of in between gooey and cake. And if you bake it for 22 minutes, it will be close to cake. You decide!

  1. Pre-heat your oven to 175°C (347°F). 

  2. Either make your own oat flour (see notes) or use store-bought oat flour. 

  3. Blend oat flour, bananas, salt, baking powder, almond milk and vanilla essence together until smooth. 

  4. Dice four of the fresh strawberries and add to the mixture. Fold them in with a spoon. 

    Slice the remaining strawberry and put aside. 

  5. Pour the mixture into two medium-sized ramekins or an oven-proof bowl.

    Swirl 1 tbsp of strawberry jam into the top of each ramekin. Top with the sliced strawberry. 

  6. Bake at 175°C (347°F) for about 18 minutes (gooey texture), 20 minutes (gooey in the middle) or 22 mins (cake-like texture). Enjoy!

Note

  • Oat flour: you can make your own oat flour! Simply put the desired amount of oats in a blender or food processor and blend until it has a fine texture. I used rolled oats but you can use quick oats just as well.
