Peanut Butter & Jam Oatmeal

This delicious vegan oatmeal is easy, fast and filling! Just like your favorite peanut butter & jelly sandwich but warm and super creamy!

If you’ve grown up in America, there is a good chance that you grew up eating peanut butter & jelly sandwiches. Or just peanut butter sandwiches I guess. But growing up here in Germany, peanut butter was not a thing until maybe 15 years ago. Or even less! But given that I really did NOT like jam when I was a kid (or most sweet things to be honest), I wouldn’t have eaten it anyways.

Fast forward to today. I love peanut butter ANYTHING! Peanut butter and jelly (or jam) is still not necessarily a combination I make for myself very often but I do like it. My 6 year old loves it though! So when you make a peanut butter and jelly sandwich, which flavor is your jelly? I heard that it’s often grape in America which is not a flavor you can get here. We love it with strawberry jam instead! Have you tried that combination?

So when I was experimenting with new oatmeal flavors (can never get enough of oatmeal!!), I thought of peanut butter and jelly! I’ll be honest, my first attempt was not great. As I like to do, I added mashed banana to my oatmeal and it was so overly sweet and just didn’t work. But that’s why I experiment so that you don’t have to!

The base for this recipe is my trusty vegan oatmeal that I love so much. It’s super creamy and fast to make. You start by soaking the oats in boiling water with a pinch of added salt. Once the oats have absorbed the water, you cook them in plant milk mixed with maple syrup. I love almond milk the most but feel free to use any other kind of plant milk. Then you add whatever toppings you like!

If you’re making this oatmeal during strawberry season, it obviously tastes fabulous if you add fresh strawberries. But if you don’t, you can either omit it or add some frozen berries. It will still be delicious!

By the way, I like to use my homemade peanut butter for this (and all recipes including peanut butter). If you haven’t made it yet, I highly recommend you give it a try! You’ll see how super easy and fast it is plus you avoid all the additives that store-bought peanut butter often has!

Instructions

  1. Mix your quick cooking oats with 1 cup of boiling water and the pinch of salt. Set aside for 5 minutes. 

  2. When the 5 minutes have passed, add almond milk and maple syrup to the oats and cook for 5 minutes on medium heat until creamy. Stir every now and then to make sure they don't stick to the bottom of the pot. 
  3. Pour the oatmeal into a bowl and top with the peanut butter and jam. Add fresh strawberries on top! Enjoy!
