Vegan “Snickers” Oatmeal

This oatmeal tastes like a delicious rich chocolate pudding! Topped with more peanut butter and chopped peanuts as well as cacao nibs, it’s basically like dessert for breakfast!

I vividly remember the first time I experimented with this porridge. I took my first bite and thought oh my goodness, this tastes like a rich chocolate pudding! For breakfast! I need to make this more often… imagine a blend of chocolate pudding and Snickers for breakfast and you’ve got it! I absolutely LOVE it!

Oatmeal is still and will probably always be my preferred breakfast. It’s just so good! I love the creaminess of it and also how versatile it is as a dish. Sometimes I feel like a lighter version and only add some banana, sometimes I feel like a fruity version and add lots of berries or apple. And sometimes I feel like eating something decadent like this. Although it actually only looks decadent! It’s still refined sugar free and healthy!

In order to make this breakfast dish extra chocolatey, I also added some cacao nibs on top and dusted it with unsweetened cacao powder. If you love dark chocolate, then this is your dream breakfast! If you’re more of a milk chocolate person, I would probably omit the cacao nibs and/ or the cacao powder. Since I love to snack on cacao nibs, dark chocolate is great for me!

This porridge also contains a triple dose of peanuts! Peanut butter in the oatmal that I added after cooking as well as peanut butter and chopped peanuts on top! Peanuts for the win!! I love peanuts and the combination of chocolate and peanuts is definitely reminiscent of a Snickers bar. If there was a dark chocolate one. If you can’t have peanuts, you can try to use almond butter and chopped almonds instead. It will taste different but I’m sure it’ll still be delicious!

Adding banana on top is just my own preference and adds a bit of creamy sweetness to it as well. Banana is my go-to number one topping for oatmeal and I absolutely love it. Funny enough, banana in most other things isn’t a preference of mine. Although, nicecream is great! What about you? Are you a banana lover or hater?

Instructions

  1. Mix quick cooking oats with boiling water, salt, unsweetened cacao powder and maple syrup. Set aside for 5 minutes. 

  2. When the 5 minutes have passed, add almond milk to the oats and cook for 5 minutes on medium heat until creamy. Stir every now and then to make sure they don't stick to the bottom of the pot. After taking the pot off the heat, add the peanut butter and mix in.

  3. Pour the oatmeal into a bowl and top with the sliced banana. Sprinkle on cacao nibs and more peanut butter and dust with unsweetend cacao powder if desired. Enjoy!
