This smoothie bowl has a hidden vegetable which makes it perfect as a breakfast for little picky eaters! It's super delicious, vegan and healthy and we all love it!
Due to the heat of the past weeks we had quite a few smoothie bowls for breakfast! It's rather unusual to have consistent heat here in Germany but it sure was nice to have a real summer. Since I like to experiment with flavors and ingredients, I wanted to mix things up a bit for our smoothie bowls. So this one is a blackberry smoothie bowl!
I love blackberries so much!! Sometimes you come across a blackberry bush in the wild here and if the berries are high enough I'll pick some. You just have to be super careful because of the thorns on the bush!! But it's totally worth it... and the berries are so beautiful to look at too!
To make this smoothie bowl more healthy (especially for my son who is not a fan of vegetables) I like to add frozen cauliflower rice to the blender. It makes it super creamy and you really cannot taste it. Promise! It's perfect for adding a healthy vegetable, especially if you have a picky eater. Plus it's always good to know you started your day healthy while eating something delicious.
In order to spice things up a little, I created two different versions of this smoothie bowl and let my family choose which one they wanted. The one on the left is the regular blackberry smoothie bowl and the one on the right has coconut yogurt swirled into it. I canot even decide which one I liked more!! I liked both of them very much...

This smoothie bowl has a hidden vegetable which makes it perfect as a breakfast for little picky eaters! It's super delicious, vegan and healthy and we all love it!
Take the bananas out of the freezer (if using a whole banana) and wait for 5 minutes so that it's easier to handle. Then peel and cut into slices. (see notes)
Add to a blender together with the frozen cauliflower rice, frozen blackberries, dates and almond milk.
Blend until all is smooth. Depending on the strength of your blender or mixer, you will need to push the smoothie bowl mixture down in between.
Pour into a bowl and top with hemp seeds, granola and fresh berries. It's also very nice if you mix in a bit of coconut yogurt! Enjoy!
