Chocolate Peanut Smoothie Bowl

Are you a big fan of chocolate and peanut butter? Then this healthy vegan breakfast is for you! Top it with crunchy chocolate granola and some berries and you're good to go!

While summer may be slowly coming to an end, the summer breakfasts are still very much popular in my family! Bring on the smoothie bowls because we only stop eating those when it starts getting properly cold. We just love a good smoothie bowl for a weekend breakfast and it's a great way to add fruit to your breakfast!

Any time I'm tricking myself (and my 6 year old) into eating something that resembles ice cream for breakfast is a win! This one is pretty close to ice cream to be honest because it contains only frozen bananas and no other fruit. I am normally more drawn to smoothie bowls that contain frozen cauliflower rice and berries but I love chocolate ice cream and I just couldn't resist creating this for you guys! And enjoying every spoonful of it too of course!

If you're a big fan of chocolate and peanuts, then this is a good breakfast for you! The smoothie bowl reminds me a bit of a Reese's peanut butter cup! It's obviously not quite like it because it's naturally sweetened (and smoother in texture) but the flavors are definitely there. Just healthier! Who's a fan of Reese's cups? Hands up!

I love topping any smoothie bowl with crunchy granola because I love different textures in my dishes. Crunchy goes super well with the cold smooth texture of the smoothie bowl! I chose a reduced sugar granola with nuts and dark chocolate chunks. And then I added roasted peanuts for that extra crunch! Totally optional of course but I highly recommend.

Berries of any kind go super well with chocolate which is why I also added some fresh raspberries and strawberries on top. If you're not a fan, you could also use blackberries and/ or blueberries which would be delicious as well. Or just omit any fruit on top and go heavy on the crunch! It's going to be delicious either way.

Description

Are you a big fan of chocolate and peanut butter? Then this healthy vegan breakfast is for you! Top it with crunchy chocolate granola and some berries and you're good to go!

Ingredients
  • 2 large frozen bananas
  • 2 tablespoons unsweetened cacao powder
  • 1 tablespoon peanut butter (heaped)
  • 1/2 cup almond milk
  • 4 ice cubes
  • fresh berries (optional)
  • granola (optional)
  • roasted peanuts (optional)
  • peanut butter for topping (optional)
  • grated coconut (optional)
Instructions
  1. Take the bananas out of the freezer (if using a whole banana) and wait for 5 minutes so that it's easier to handle. Then peel and cut into slices. (see notes)

  2. Add to a blender together with cacao powder, peanut butter, almond milk and ice cubes. 

  3. Blend until all is smooth. Depending on the strength of your blender or mixer, you will need to push the smoothie bowl mixture down in between.

  4. Pour into a bowl and top with fresh berries, granola, more peanut butter, grated coconut and some roasted peanuts. Enjoy!

Note
  • Bananas: the bananas should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe. I like to freeze it whole and then wait a few minutes after removing it from the freezer. Then I make a cut down the middle lengthwise and cut it into slices. It's easy to peel then.
