Peanut Butter Raspberry Smoothie Bowl Recipe

If you've been following my blog for a while, you probably know about my endless love for smoothie bowls for breakfast! And this is another winner! Very much kid approved too. In fact, I was hoping my son would share with me but he was having none of that... big fan of smoothie bowls here!

I wanted to create a smoothie bowl that doesn't only contain fruit but also vegetables. Or in this case my always trusted and favorited frozen cauliflower rice. I'll admit it, I snuck it in the blender when my son left the room for a minute. He will never know. I would prefer him being aware of what's in his food but he's in a bit of a vegetable hating phase. That way at least he will eat some vegetables!

And no, you really cannot taste the cauliflower. I wouldn't like that either! It just makes it creamier and smoother. Yum! Again, this recipe contains my homemade peanut butter. I just love it! And I cannot tell you guys enough, make your own peanut butter – please try it. It's so simple and fast and tastes SO good!!

Other than peanut butter and frozen cauliflower rice, this smoothie bowl contains almond milk (always a fave!), frozen raspberries, frozen bananas and dates. It's sweet, it's creamy, it's vegan and full of good stuff – what more could you want in a breakfast?

Freezing bananas for later use in smoothie bowls or nicecream is a fantastic way to use them when they're just getting too ripe for eating like that. I'll be honest, I prefer bananas when they've just become fully yellow. Almost green basically. None of the little brown spots that indicate they will be very sweet. Ripe bananas are just too sweet for me. However, they are great for those recipes – and also for baking (cue: Vegan Chocolate Banana Muffins coming soon!!).

And as always, toppings are a must with smoothie bowls. It's basically the best part. I just added lots of hemp seeds on mine (LOVE hemp seeds!) while my son loaded his smoothie bowl with crunchy granola. Each to their own. Oh, and more raspberries and peanut butter of course. Yum!

Description

This smoothie bowl is full of great ingredients and a perfect way to incorporate a hidden vegetable in a super tasty breakfast! Your kids will love it! It's creamy and sweet and and vegan - so yum!

Ingredients
  • 2 frozen bananas (see notes)
  • 1 cup frozen cauliflower rice (see notes)
  • 1 cup frozen raspberries (plus more for topping)
  • 4 dates
  • 3/4 cups almond milk
  • 2 tablespoons peanut butter (plus more for topping)
  • hemp seeds (optional)
Instructions
  1. Take the bananas out of the freezer (if using a whole banana) and wait for 5 minutes so that it's easier to handle. Then peel and cut into slices. (see notes)

  2. Add the banana slices into the blender jug together with the cauliflower rice, raspberries, dates, almond milk and peanut butter. 

  3. Blend until all is smooth. Depending on the strength of your blender or mixer, you will need to push the smoothie bowl mixture down in between.

  4. Pour into a bowl and top with hemp seeds, more peanut butter and more raspberries. Enjoy!

Note
  • Bananas: the bananas should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe. I like to freeze it whole and then wait a few minutes after removing it from the freezer. Then I make a cut down the middle lengthwise and cut it into slices. It's easy to peel then.
  • Cauliflower rice: If you cannot get frozen cauliflower rice in your area, you can also grate a fresh (the fresher, the sweeter the taste!) cauliflower finely and freeze it in portions. Here's a good explanation on how to make cauliflower rice yourself.
