Vegan Cherry Smoothie Bowl

This smoothie bowl is perfect for cherry season! Topped with more sweet cherries and crunchy granola, it's super refreshing and satisfying on a hot summer's day!

It's cherry season! Hurray! When I was growing up, cherries were my absolute no. 1 favorite fruit. The fact that you could only get cherries for a few weeks in the year increased the anticipation even more! My mum also loved cherries so we would always squabble over the last few ones. In fact, I remember using cherries as "prize money" during card games. Now that I'm all grown up, I don't get them nearly as often as I could. Funny how that goes...

For this smoothie bowl recipe you don't strictly need to wait until cherry season. The reason is that I'm using frozen cherries. Sour cherries to be exact - somehow we can only get frozen sour cherries and not sweet cherries. I like both kinds of cherries very much and sour cherries provide a nice tartness in this smoothie bowl. You do need to add quite a few dates to counteract that though! Then you get this lovely sweet and sour refreshing taste that I really enjoyed.

The nice thing about a smoothie bowl is that it comes together so fast. Once you've added all your ingredients to your blender, it does all the work. And it's always fun to see how it all comes together and becomes this icy deliciously creamy mixture. I love eating smoothie bowls out of my coconut bowl! Such fun! And I obviously love topping it with more ingredients. A crunchy granola always works so well! And fruit of course, more fruit is always a win!

I love topping this creamy refreshing smoothie bowl with more cherries - fresh sweet ones in this case. There's something so fun about dipping the cherries into the smoothie bowl! Of course you can also take the stone out before adding them if you don't want to eat them that way. I just like it like that! It reminds me of my childhood and playing that game in the garden where you win if you spit the cherry stone the furthest. Did you also play that when you were a kid? I never won though!!

Description

This smoothie bowl is perfect for cherry season! Topped with more sweet cherries and crunchy granola, it's super refreshing and satisfying on a hot summer's day!

Ingredients
  • 1 frozen banana (see notes)
  • 8 dates
  • 1 cup frozen sour cherries
  • 6 ice cubes
  • 0.5 tablespoons unsweetened cacao powder
  • 1/4 + 1/8 cup almond milk
  • hemp seeds (optional)
  • fresh sweet cherries (optional)
  • granola (optional)
Instructions
  1. Take the banana out of the freezer (if using a whole banana) and wait for 5 minutes so that it's easier to handle. Then peel and cut into slices. (see notes)

  2. Add dates to the blender together with banana slices, frozen sour cherries, ice cubes, almond milk and unsweetened cacao powder. 

  3. Blend until all is smooth. Depending on the strength of your blender or mixer, you will need to push the smoothie bowl mixture down in between.

  4. Pour into a bowl and top with crunchy granola, hemp seeds and fresh sweet cherries. Enjoy!
Note
  • Banana: the banana should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe. I like to freeze it whole and then wait a few minutes after removing it from the freezer. Then I make a cut down the middle lengthwise and cut it into slices. It's easy to peel then.
