Super Fluffy Yogurt Waffles Recipe

My 5 year old LOVES eating waffles on the weekend. In fact, he would probably eat them every day but I just don’t have the time in the morning to make waffles before kindergarten. So most weekends he asks for waffles. We basically eat the same thing every weekend – waffles on one day and Acai Berry Power Smoothie Bowls on the other day.

Last weekend – as I expected – my little boy came to me in the morning and asked if we could make waffles. He loves creating recipes with me since I started this blog. He often asks me to make something for the blog with him, or if I made something for dinner, he wants to know if that is going to be on the blog. My son is my biggest supporter! When my husband and him went grocery shopping last week, he brought home a beautiful wodden spoon for me which he had chosen. So sweet!

So we made these Super Fluffy Yogurt Waffles together! These waffles come together very quickly – I could probably even manage to make them before kindergarten. But don’t tell my son! You only need a few ingredients which you probably have in your pantry and fridge anyways. You will need flour, eggs, milk, yogurt, a pinch of salt and baking powder. Whisk everything together and there you have it. The batter for your super fluffy waffles!

I generally prefer unsweetend waffles since I love topping my waffles with lots of maple syrup or date syrup. And fresh fruit. So as I rule I normally don’t sweeten my batter. However, if you prefer a sweeter type of waffle, feel free to add any kind of sweetener to the batter.

If you have been reading my blog for a while, you will know that I LOVE toppings. So the same goes for waffles. It’s super practical if your waffles are not sweetened because there are endless possibilities. You could go savory by adding grated cheese on top. Or sour cream and lox. Or you can go sweet like my son does and add fruit and maple syrup. Jam or chocolate sauce. Waffles are awesome!

What will you top these fluffy waffles with? What is your favorite kind of topping? Savory or sweet? Jam or maple syrup?

Or do you feel more like pancakes? Have you tried my Watermelon Pancakes yet?

Ingredients

Instructions

  1. Mix flour, baking powder and salt in a bowl.

  2. In a separate bowl, mix together eggs, yogurt and milk.

  3. Add the wet ingredients to the dry ingredients and mix well.

  4. Heat up a waffle maker and spray or brush with oil.

  5. When the waffle maker is heated up, add about 1/3 cup of batter to each side.

I use a waffle maker which makes two rectangular shaped waffles at once.
  6. Proceed with the batter until all has been used up. It makes about 8 waffles. Top with e.g. maple syrup and blueberries. Enjoy!

Note

This recipe makes 8 waffles.
