Chocolate Chia Blender Pudding

Are you still looking for a Valentine’s Day dessert? Look no further! This chia blender pudding is healthy, refined sugar free and comes together super fast! And did I mention it’s delicious? 

Chia Blender Pudding is my new favorite dessert! It’s creamy and easy to make, contains no dairy or refined sugar and is super filling. What’s not to love? When I made these yummy pudding cups, I ended up eating one of them as my lunch. Chia seeds are very filling while so good for you. 

In case you’re not familiar with chia seeds, they are tiny white or black seeds whose consistency changes to gel-like when mixed with liquids like plant-based milk. They also have lots of great health benefits such as being an excellent source of antioxidants, and are high in several nutrients like calcium, phosphorus, and magnesium.

I’ve loved chia seeds for years, in particular in the form of chia pudding. I used to make my chia pudding by mixing whole chia seeds with almond milk, cacao powder and some kind of sweetener. Then you mix it and let it sit for a while in the fridge until the chia seeds have become gel-like – hence turning them into a pudding.

But I’ve had another version of chia pudding in the back of my mind for a long time which I once saw many years ago. That version suggested to use blended chia seeds so that you end up with something like healthy instant pudding! I tried it back then and it was a complete fail. My blender wasn’t strong enough and just ended spinning the seeds round and round without any effect. But my lovely husband gave me a super cool kitchen machine for Christmas which included a blender and guess what? That one has power!

This chia pudding really is easy and quick to make! If you’re planning a super complicated dinner for Valentines but want a no-fuss dessert that’s even healthy, I highly recommend making this. Also, this chia pudding is not overly sweet so if you’re a sweet tooth, I suggest you add some more date syrup. I like my desserts semi-sweet. Hence the dark chocolate sauce!

Instructions

  1. Blend chia seeds in a blender for about a minute until they are very fine. 

  2. Add peeled banana, salt, peanut butter, date syrup, cacao powder and (as the last step just before blending!) almond milk. Blend immediately and continue to do so until all is mixed well and smooth. 

    As soon as you add the almond milk, the chia seeds will start to gel up so make sure to blend immediately to avoid clumps!
  3. Mix melted coconut oil, date syrup and cacao powder together. Mix well. 

  4. Drizzle some of the chocolate sauce on the inside and the rim of the jar. Add some to the bottom of the jar. Put in the fridge for 5 minutes. Then layer two heaped tbsp of the chia pudding on top of that. Drizzle some more chocolate sauce on top. Add another few heaped tbsp of the chia pudding on top followed by some more chocolate sauce. Continue until the jars are full and the pudding has been used up. Drizzle with the rest of the chocolate sauce. 

  5. Top with cacao nibs and some banana slices. You can either enjoy it now or leave in the fridge for about 30 minutes so that the chocolate sauce will firm up a bit. Enjoy!

Note

Cacao powder: I like using Dutch processed cacao powder.
