Soft and juicy on the inside and crispy on the outside, these dairy-free healthy fried apple rings are a delightful dessert at any time of the year! They’re particularly delicious with powdered sugar and/or maple syrup on top!
Growing up, my mum wanted us all to eat lots of healthy food. It was really important to her that we don’t have desserts with lots of sugar in and she made healthy sweet(ish) things for us instead. To be honest, it actually suited me because I was the odd kid who didn’t like cake, hot chocolate and bread with jam or honey. I still don’t like honey much by the way but that’s beside the point.
So one of the things she occasionally made for us as a treat were healthy apple fritters. I never found out how she made them but there were one of my favorite things. They’re definitely not overly sweet but you can balance that out by adding powdered sugar or maple syrup. Or both! I’m sure they would also be really lovely with vanilla ice cream on top!
Now, I made them with spelt flour because that’s how I think that my mum made them but you can also use all-purpose flour or whole wheat flour. As sweetener, I’m using coconut sugar because I love its caramel flavor and it’s generally one of my favorite refined sugar replacements. If you don’t have any coconut sugar or don’t like it, feel free to replace it with white or brown sugar.
These apple fritters come together super fast. You make the batter by mixing milk, eggs, sweetener, flour, almond meal and baking powder. Then you peel, core and cut apples into rings and dip them into the dough. The dough sticks nicely to the apple rings so when you add them to the hot oil in a pan, they fry nicely. After a few minutes they’re done! Enjoy when they’re still hot!

Peel and core the apples while leaving the apples intact (2 or 3 apples depending on the size of your apples). Then cut them into rings.

Make batter by mixing eggs, almond milk, salt, coconut sugar, almond meal, spelt flour and baking powder. The batter will be quite thick so that it can stick nicely to the apple rings.

Heat coconut oil in a pan on medium heat. Dip the apple rings (not more than 3 at a time) in the batter and make sure they're fully covered in batter. When the oil is hot, add the rings to the oil. Fry at medium heat and flip after 2-3 minutes. Fry for another 2-3 minutes. Repeat with the rest of the apples / batter. Enjoy!

Servings: this makes about 13 apple fritters so if you eat about 3 per person, it would be enough for 4 people
