Cinnamon & Apple Dutch Baby Pancake

This is a fall inspired, easy and super delicious apple & cinnamon dessert! The oven-baked pancake is fluffy, crispy, creamy and so flavorful!

Autumn is full on here in Germany these days. All the leaves are colored in red and yellow, green and brown and my body just wants to have cosy comfy afternoons with delicious treats! Reading books on the couch, drinking tea or having a nice bath are some of the wonderful things to do when the weather starts getting colder - what is your favorite activity?

Autumn and apples just go together for me. And apples and cinnamon do too! So it only made sense to make a fall inspired Dutch baby pancake! Let me remind you again, if you haven't yet tasted the deliciousness that is a Dutch baby pancake, please pretty please go make one right now!

The most important thing you need if you want to start making Dutch Baby pancakes is a cast iron pan. It's important the pan is fully made out of cast iron one because if the handle is made from a different material like wood you cannot put it in the super hot oven. To be honest, my pan wasn't super expensive but I've used it many times by now and it works perfectly.

The importance of a successful pancake is definitely also that the pan is super hot when you pour in the pancake batter. That's why you have to put the cast iron pan in the oven already during the heating up phase!

The filling for this delightful treat is a mixture of cinnamon stewed apples and cinnamon flavored cream cheese. I mixed cream cheese with agave nectar and cinnamon and it's so yummy! You can also use other sweeteners if you like - maple syrup would go very well with it too for example. The cream cheese mixture will melt a bit when added on top of the hot pancake and it's seriously SO good!!

Description

This is a fall inspired, easy and super delicious apple & cinnamon dessert! The oven-baked pancake is fluffy, crispy, creamy and so flavorful!

Ingredients
    Apples
  • 3 apples
  • 1/2 cup water
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon agave nectar
  • 1 teaspoon corn starch
  • Dutch Baby Pancake
  • 3 eggs
  • 1/2 cup all purpose flour
  • 1 pinch salt
  • 1/2 cup milk
  • 1.5 teaspoon sunflower oil
  • Cinnamon Cream Cheese
  • 1/4 + 1/8 cup cream cheese
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons agave nectar
Instructions
  1. Peel and core the apples and cut them into wedges. Add them to a pot together with water, ground cinnamon and agave nectar. Bring to a boil, then let simmer for 30 minutes. 

  2. Mix corn starch with 3 tsp of the liquid of the stewed apples. Add to the apples and mix in well. Let simmer for 2 more minutes until thickened. Put aside. 

  3. Pre-heat oven to 230°C (446°F). Put your cast-iron pan in the oven while it heats up. Once oven is hot, add oil to the pan and wait for one minute. 

  4. In a bowl, mix together eggs, salt and all purpose flour. Slowly add in milk until it becomes one smooth batter. 

  5. Pour batter into the middle of the pan and bake for 18 minutes until the pancake is puffed up. 

  6. In the meantime, mix together cream cheese, cinnamon and agave nectar. 

  7. Take the pancake out of the oven and top with the stewed apple mixture and the cinnamon cream cheese. Enjoy!
