Baked Lime & Coriander Salmon

This easy to make and super delicious baked salmon is such a perfect summer meal! It's light, really delicious and goes with just about anything!

Warm days means light meals in my family. And this salmon dish is such a great example! I love pairing it with rice and a salad, or just a salad and maybe some bread? It's great cold the next day too if you have leftovers. I like making a bigger amount at once and then eating it for the next couple of days. My husband likes it on a sandwich with mayonnaise and I like it in salad or mixed with rice as a stir-fry.

But of course it's most delicious when fresh out of the oven! I've made this a few times over the past few months and even on Christmas because it looks kind of fancy but is super low effort. And isn't the green so very beautiful? The marinade for this salmon is packed full of coriander which makes it so green and also so super tasty!

Do you love coriander or not? I am a HUGE coriander fan and try to always have fresh coriander in the fridge. It really elevates dishes so much in my opinion! It's great in marinades but I also love using it in dressings, added to stir-frys or in dips. It must be so tough if you're one of the people to whom coriander tastes like soap! Are you one of them?

So this is another easy recipes! First you have to cut into the salmon but not all the way through - this is important so that the marinade really goes everywhere! More marinade = more flavor! Then you blend all the ingredients for the marinade together, spread it all over and between the salmon and bake it in the oven for 15 minutes. And you're done!

Description

Ingredients
  • 750 grams fresh salmon fillet (1.6 pounds)
  • 2 tablespoons lime juice
  • 1 bunch of coriander (with the stems)
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/2 tablespoon maple syrup
Instructions
  1. Pre-heat oven to 220°C (428°F). Cover baking tray with parchment paper.

  2. Cut the salmon fillet into thick pieces while leaving the skin intact. Place on the baking tray with space in between. 

  3. To a blender, add lime juice, coriander, salt, olive oil, Dijon mustard, garlic powder and maple syrup. Blend well. Brush all over the salmon. 

  4. Bake at 220°C (428°F) for 15-20 minutes until it's flaky. Serve with rice and vegetables. Enjoy!
