Spinach & Parmesan Meatloaf

Don’t you just love meatloaf? There’s something so comforting about it! We don’t eat a ton of meat in my family anymore with two out of five people eating only vegetarian food. But every now and then I make something for the remaining three of us. This meatloaf is one of the the recipes I have been making a lot! And even our 17 year old who is REALLY not into spinach eats this one happily.

Plus it makes for great leftovers! It’s not a huge meatloaf to begin with but if I just make it for two of us, then there’s bound to be some leftover slices. Fry those up the next day and add them to a sandwich with some lettuce and mustard – yum! Or chop them into pieces and fry together with eggs and potatoes. What do you like to do with leftover meatloaf?

I tried making this particular meatloaf in the oven and in the aifryer and somehow it got too dark in the airfryer. So I highly recommend using an oven. Also, you want to line your baking tray or casserole dish because that way you won’t have to clean off any slightly burnt meat juices afterwards. Life hack.

I added lots of spinach to this meatloaf because it’s a great way to add vegetables to an otherwise meat heavy dish. Also, it helps keep the meatloaf moist. I like using frozen spinach that I defrost in time to add it to the meat. Fresh spinach is wonderful too but it tends to go off quite quickly so I always have a bag of frozen spinach in the freezer. The freshly grated parmesan adds a lovely salty flavor to the dish – and I recommend adding some on top of your slices as well.

Brushing it with barbeque sauce is a must! It adds such lovely flavor to it and creates a nice crust on top. I like using my homemade BBQ sauce (the recipe for which will come on my blog at some point) but you can use any kind you like. I like a slightly spicy fruity BBQ sauce – which one is your favorite kind?

  1. Pre-heat oven to 180°C (356°F). Cover baking tray with parchment paper. 

  2. Squeeze out the defrosted spinach and chop it up. Tear the slices ot toast into small pieces. Add both to a bowl together with the beef mince, egg, grated parmesan cheese and spices. Mix well with your hands and let sit for 10 minutes. 

  3. Shape into a loaf and put on the baking tray. Brush with BBQ sauce and bake at 180°C (356°F) for one hour. Cut into slices and eat together with mashed potatoes and vegetables. Enjoy!
