Lime & Coriander Cauliflower Rice

This Whole30 friendly cauliflower rice dish is super flavorful and tastes so fresh! It’s a great side dish with most meals or lovely as a burrito filling.

At the moment this is one of my favorite side dishes! I particularly love pairing it with a nice salad for lunch. When the weather is so hot, I don’t always need protein with my meal and this is a filling, healthy and fresh lunch that I really love.

There’s something about the combination of lime and coriander that just works. Lime is probably my favorite citrus fruit to begin with – I’m one of those people that sucks the flesh out of lime wedges in drinks. Anyone else do that? Lime has the tartness but there’s also a sweetness and a slight bitterness to it. I’m a big fan of bitter things anyways so that combination really works for me!

By the way, in case you’re wondering why I’m not just adding the coriander leaves but also the stalks, they hold so much flavor! I highly recommend using them in your dishes as well because they taste really good and you automatically add more coriander flavor. Plus less waste so win win!

Obviously this side dish would also work very well with fish, any kind of white meat or fried tofu. We’ve also added it to a burrito instead of regular rice and it was lovely! I really like that cauliflower rice can be a wonderful low carb alternative that is healthy, filling and easy to make. Of course it does not taste exactly like rice but it’s close enough to fulfill the desire if you’re trying to eat low carb or Whole30.

Instructions

  1. Add frozen cauliflower rice, water and vegetable broth cube to a pan. Cover with a lid and bring to a boil. Then lower the temperature and simmer for 5- 7 minutes while stirring every now and then.

  2. When the cauliflower is soft (but NOT mushy!) and the liquid has mostly evaporated, add the lime juice and chopped fresh coriander. Take off the heat and mix all together. Enjoy!
