This Mexican cauliflower rice dish will turn you into a lover of cauliflower rice! It’s super healthy, full of flavors, fast and easy to make and a wonderful rice replacement.
Cauliflower rice is one of those food items that I absolutely love to cook with! It’s a fantastic oat replacement which you probably know from one of my cauliflower porridge recipes. Adding it to a smoothie or smoothie bowl also results in a super creamy consistency! And of course not to forget the many different ways in which you can use cauliflower rice as a rice replacement.
At the moment I love to eat cauliflower rice with salad on the side for lunch. Or with vegetables on the side. Even though my entire plate is loaded with vegetables, it feels like it’s two different sides – one starch and one vegetable. Adding more vegetables is always a great change in your diet and this is definitely a fantastic way of doing it. And delicious too!
This cauliflower rice has all the Mexican flavors. Since I can never find a proper Mexican spice mixture here in Germany, I decided to mix spices together that go well with a Mexican dish. I used a mixture of ground coriander, garlic, smoked chipotle, smoked paprika, salt and oregano. I think I’ll make a big batch of this and just use a certain amount of this during cooking. That way you don’t have to take out all of the spice jars but just the one with the mixed one.
This side dish is super fast to make and has all the yummy flavors you want! If I don’t eat any protein with it, I will devour the whole bowl happily. Otherwise it’s enough for two people with extra vegetables on the side. I bet this would be so good in a burrito with some protein as well! Must remember to try that some time soon.

Seed and dice the bell pepper.
Heat up olive oil in a pan. Add the diced bell pepper and fry for five minutes.

Add the frozen cauliflower rice, water, broth cube and all the spices. Mix well. Cover the pan with a lid, bring to a boil, then reduce the temperature and simmer for 7-8 minutes or until the cauliflower rice is soft and most of the liquid has evaporated.

Take off the heat. Add lime juice and chopped coriander and mix. Enjoy!
