Smashed Bacon & Parmesan Brussels Sprouts

These smashed Brussels sprouts are flavorful, crispy and topped with all the goodies! Freshly grated parmesan, crispy bacon and fresh coriander make them super delicious!

Are Brussels sprouts yay or nay for you? It’s a definite yay for me! In my opinion, they are a severely underappreciated vegetable and so delicious when prepared right! Especially when they’re creamy on the inside and a little crunchy on the outside. Top them with other goodies and you’ve got a definite winner!

And with goodies I’m talking parmesan and bacon. Who doesn’t love bacon, right? Bacon flavor on anything is such a win! I don’t eat a lot of meat but bacon is one of those things I love to eat every now and then. I prefer low fat bacon so I also used that in this case. It gets crispier faster too I find. Which kind do you prefer? Fatty bacon or low fat bacon?

And parmesan is THE best cheese for toppings anyways. It happens to be my 6 year old’s favorite cheese too. I was told by my mum that I used to gnaw on parmesan already as a baby and that’s probably where my infinite love for that cheese (and others) comes from. Well played, mum…

This is such a delicious side dish for any dinner but also festive enough to serve it alongside your Christmas meal for example! Brussels sprouts is quite the traditional side dish for holidays like Thanksgiving and Christmas anyways so maybe you will serve this one this year? I sure will!

Description

These smashed Brussels sprouts are flavorful, crispy and topped with all the goodies! Freshly grated parmesan, crispy bacon and fresh coriander make them super delicious!

Ingredients

Instructions

  1. Pre-heat oven to 180°C (356°F). Cover baking tray with parchment paper. 

  2. Wash, clean and trim the Brussels sprouts. You will normally just need to cut off part of the stem and remove the outer layers. 

    Cook them in a pressure cooker for 5 minutes, then fast release the steam. 

  3. Place the Brussels sprouts on a baking tray and flatten with a fork. Spray with olive oil and sprinkle with salt and rosemary powder. 

  4. Roast at 180°C (356°F) for 15 minutes. Sprinkle with freshly grated parmesan and put back in the oven. Raise the temperature to 200°C (392°F) and roast for 15 more minutes. 

  5. In the meantime, fry or airfry (I like to airfry for extra crisp) the low fat bacon until crispy. Crumble and sprinkle over the Brussels sprouts. Chop some fresh coriander and add on top as well. Enjoy!
