Vegan Honey & Peanut Butter Hot Chocolate Recipe

There is this cute little cafe / bakery at the end of our street. They have been making the most amazing rolls and pastry for years and nothing here compares to their prducts in my opinion! A while back they must have added drinks and other things to their meu. When I cycled back home recently, I saw a blackboard outside their door advertising, among other things, Peanut Butter Latte.

Now, unfortuntealy I cannot handle coffee AT ALL. I love the taste but it makes my body get almost like a panic attack so I avoid it at all costs. And yes, theoretically there is decaf coffee but I hardly ever trust the barista in cafes to get right. Not after one time in Paris a few years ago when they didn't get it right. Plus coffee and peanut butter together sounded … a little bit strange? Is that a thing? Like am I missing out?

The idea of mixing peanut butter into a hot drink somehow gut stuck in my head though so a few days later I thought about how the combination of chocolate and peanut butter is ALWAYS a win. You see where this is going...

And adding honey is one way of avoiding refined sugar. You can definitely also use maple syrup or date syrup, I'm sure both would be lovely as well. And yes, honey is not that much better than sugar BUT it's lower on the glycemic index which makes it one of the best sugar substitues of the ones on offer.

I like using Barista oat milk for this recipe because it foams up so nicely and that's one of the things that I used to miss about not using milk (much). If you cannot have oat milk or just prefer a option with lower calories, I would suggest almond milk. Barista oat milk has added fat which is what makes it foam up when using a milk foamer!

For this recipe, you need to create a hot chocolate „paste“ by mixing honey, peanut butter and unsweetened cacao powder. Depending on how sweet you like it, you can add more or less honey (or other sweeteners). When your hot chocolate paste is smooth, mix it with a bit of the hot and foamy oat milk and stir all together. Then add it to the rest of the oat milk and whisk all together. I like to foam it up again afterwards but that's only optional!

Ingredients
  • 1 cup Barista oat milk
  • 1 tablespoon smooth peanut butter
  • 1 tablespoon honey (or less if you like it less sweet)
  • 1 tablespoon unsweetened cacao powder
Instructions
  1. Create a paste by mixing together peanut butter, honey and unsweetened cacao powder.

  2. Heat up the oat milk in a pot and foam up with a milk foamer. 

  3. Mix a bit of the oat milk together with the chocolate paste and whisk together. Add this to the rest of the hot oat milk and whisk together until all is well combined. Enjoy!

Note

Peanut butter: you should use a smooth peanut butter or you will have chunks in your drink!
