The Cutest Mini Dutch Baby Pancakes

These are the cutest little Dutch Baby Pancakes - so easy to make and so perfect for any kind of gathering! Or just because since they're super yummy. Fill with whatever you like and enjoy!

Are you a fan of Dutch baby pancakes? You don't know them?! Well, it's time you get to know them because they are D E L I C I O U S! And actually pretty easy to make too. You can fill them with whatever you like and I've done my share of delicious fillings like Cinnamon & Apple Dutch Baby Pancake, Black Forest Dutch Baby Pancake or Pistacchio & Tomato Dutch Baby. Sweet or savory, you can go wild! Basically, the world is your oyster!

Normally I make a big Dutch baby pancake and it's enough for 2 - 4 people depending on if it's a savory or a sweet one. And of course how hungry everyone is! For the big pancake, I use my cast iron pan and that's a must - you can heat it up to a high temperature which is one of the necessary steps for a great Dutch baby pancake.

A few weeks ago, I started thinking that it would be so nice to have little ones! I used a metal muffin baking tray and it worked very well too - plus look how cute those little ones are!! And why limit yourself to one type of filling if you can do several? You could even make some sweet and some savory! Look, I will forever love buffets for the range of choice and this is a similar concept for me. And having the possibility to choose is just fantastic!

So for my fillings, I chose four different - equally delicious - ones. I filled some of the pancakes with pesto and diced cherry tomatoes. Then others with a dill infused cream cheese and flaked hot smoked salmon - you could also use regular smoked salmon but I just LOVE hot smoked salmon. I also used chopped sundried tomatoes, basil and grated parmesan for one type of filling. And the last ones were filled with a herb cream cheese, crispy bacon and some dukkah on top.

I seriously cannot even decide which one my favorite flavor was. My husband and me devoured them for lunch and I cannot wait to make them again. Or maybe do a range of different sweet fillings for an afternoon get together. Either way, I can see this working super well for a party too!

Ingredients
    Mini Dutch Baby Pancakes
  • 3 eggs
  • 1 pinch salt
  • 1/2 cup all purpose flour
  • 1/2 cup milk
  • Herb Cream Cheese & Bacon Filling
  • 1/8 cup cream cheese
  • 1/8 cup Quark (or Ricotta)
  • splash of milk
  • salt
  • 1 tablespoon fresh or frozen mixed herbs
  • 1/4 cup bacon (cut into small pieces)
  • 1 teaspoon dukkah (see notes)
  • Parmesan & Tomato
  • 2 tablespoons pesto of any kind
  • 2 cherry tomatoes (chopped)
  • Dill Cream Cheese & Hot Smoked Salmon
  • 1/4 cup cream cheese
  • splash of milk
  • 1 teaspoon liquid dill (or fresh dill)
  • 1/4 cup hot smoked salmon (flaked)
  • Sundried Tomatoes & Parmesan
  • 3-4 sundried tomatoes in oil (chopped)
  • 1.5 tablespoon freshly grated parmesan cheese
Instructions
  1. Pre-heat oven to 230°C (446°F). Add a metal muffin tray to the oven already during the heating up. 

  2. Crack eggs in a bowl, add salt and flour and mix well. 

    Add milk and mix in. 

  3. When the oven is hot, add 1/2 tsp of butter to each muffin cavity and swirl it around. Be careful cause the muffin form will be very hot!

    Fill the cavity 3/4 of the way and put the muffin tray back into the oven quickly. 

    Bake at 230°C (446°F) for 12 minutes. Remove from the oven and put on a cooling rack for 10 minutes. 

  4. Filling possibilities: 

    Cream Cheese and Bacon:

    Mix together equal parts cream cheese and Quark (or smooth cottage cheese) together with a splash of milk, a pinch of salt and some frozen herbs. Fry some bacon bits until crispy. Fill the herb cream cheese mixture into the cavities of the pancakes and top with crispy bacon bits. Sprinkle some dukkah on top. 

  5. Parmesan & Tomato: 

    Cut up sundried tomatoes in oil (I used one per filling) and grate parmesan cheese. Fill both into the pancake cavity. 

  6. Cream Cheese and Salmon: 

    Mix cream cheese with a splash of milk and fresh dill (or liquid dill if you have). Flake hot smoked salmon. Fill the pancake cavity with dill cream cheese and top with salmon flakes. 

  7. Pesto & Tomato: 

    Fill store-bought pesto into the pancake cavities and top with chopped tomatoes.
