Summer Berry & Feta Cheese Salad

Our current favorite summer salad is super fresh, salty from the feta cheese and comes together with the most delicious strawberry dressing! Easy to make, yet an absolute crowd pleaser!

You guys, I just love salads SO much! Every year when the weather gets warm in late spring, my body automatically starts craving salad for lunch. Or supper. Or both. I mean, I’ll be honest, lunch salad is mostly just greens, tomatoes, peppers and some sort of protein with a tahini or olive oil dressing. Simple but very yummy and most of all fast. But if I’ve got more time or if it’s a dinner salad, then I’ll make more effort for sure!

This particular salad was such a big family hit that I’ve made it so many times in the past few weeks. Pretty much every time we had strawberries in the fridge, my husband asked me to make it. I’ve made variations (due to being very spontaneous) of it too. Sometimes I omitted the blueberries / added more strawberries or exchanged the feta cheese for parmesan cheese. But this is still my favorite version and if I have all the ingredients, I will definitely make it with blueberries and feta cheese.

When it’s strawberry season (like at the moment), I buy strawberries pretty much every time I go to the shops. Which to be fair is normally twice a week. Or we go pick them on the strawberry fields not too far from where we live. Also lots of fun! Strawberries generally don’t tend to last very long so it’s better to use them up quickly – I like using the freshest ones for the salad and the ones that might be a bit soft or riper for the dressing. That way they all get used up in the best way!

Speaking of dressing! I think the best part about this salad is honestly the dressing. Each salad ingredient on its own is delicious (who could say no to berries anyways?) but the dressing just brings it all together. It’s a blend of fresh strawberries, olive oil, honey, salt and white vinegar. There’s something about this combination that just tastes absolutely amazing!

If you’re wondering what to pair this salad with, I’ve made it just like that for lunch or on the side of several dinner dishes. It goes really well with roasted or grilled chicken and actually any BBQ dish. We’ve had it alongside sausage pitas or with rice and shrimp. It goes with anything and is definitely a standout side dish for its simplicity, yet delicious flavors.

Instructions

  1. Shred the lettuce, quarter the strawberries and crumble the feta cheese. Add all to a bowl together with the blueberries. 

  2. For the dressing, add the strawberries, white vinegar, salt, olive oil and honey to a blender. Blend well. 

  3. Pour the dressing over the salad and mix well. Serve immediately. Enjoy!
