My love for avocado dates back about 20 years. Wow, has it been that long? Avocados were getting popular while I was studying English. I remember that so clearly because one day I had a friend over from my class and she sort of nibbled on her avocado half and I was almost offended that she left half of it. I mean, who does that?
In 2004 I spent a few months in New Zealand and part of that time was at a winery in Hawke’s Bay. The lovely family who owned the property happened to own avocado trees and there was always avocado to eat on sandwiches for lunch. With marmite underneath! If you are not aware of this combination, you HAVE to try it. It’s one of my favorite avocado sandwiches to this day!
But anyways, since then avocado toast is one of those lunches I love and should actually eat way more often! This here is one of the nicest combinations and absolutely delicious! I particularly love how fast and how little effort it is! The creamy avocado, the crunch from the roasted sesame seeds and the flavorful sun-dried tomatoes and capers combined together form such a delightful lunch treat.
I love this combination most on a rhye sourdough bread. I guess that any sourdough bread would work well but as a German native I am naturally drawn to darker breads! Let me know if you try this on another kind of bread – I would be interested to know how it tastes!

Mediterranean Avocado Toast

This Avocado Toast comes together super fast and is really delicious! The creamy avocado, the crunch from the roasted sesame seeds and the flavorful sun-dried tomatoes and capers combined together form a delightful lunch which is naturally vegan.

Depending on which bread you use, either cut the one slice in half or keep two slices intact and put both halves in the toaster for 3 minutes.

Fry the sesame seeds in a pan at medium heat for 5 minutes. Move them around while frying every now and then.

Cut the avocado in half and take out the seed. Scoop out the flesh of each half in one go. Cut into very thin slices while leaving the slices together. Move one half onto each slice or piece of toast and lightly press down on the avocado slices so that they move apart a little bit.

Sprinkle each slice with a bit of salt and the fried sesame seeds.

Cut up the sundried tomatoes and top the toasts with them and the capers. Enjoy!
Note
Bread: I love rhye sourdough bread so I used that for the toast. The slices are very long so I cut it in half to make two sandwiches. If you use a smaller loaf, use two slices instead.
Serving size: this makes 1-2 servings. I ate it all for lunch but it could also be enough for two people, especially if you still have a salad on the side.
