Grilled Zucchini & Ham Tramezzini

This quick sandwich is so juicy and flavorful, it will become your new favorite lunch! Soft white bread with a thin layer of homemade mayonnaise, fried zucchini slices and rosemary ham – to die for!

When I think back to my childhood, I remember having a particular fondness for tramezzini. We didn’t eat them often but my parents used to get them when we were on vacation in Venice, Italy. We used to go there twice a year and I still go there nowadays – it’s a huge family favorite! You see tramezzini in all of the bars and cafés in Venice (and probably other parts of Italy) and they come with all sorts of different toppings.

In case you’re not familiar with tramezzini, it’s a triangular Italian sandwich which consists of two slices of soft white bread with the crust cut off. I think our soft white toast is the closest you can find – if you cut off the crust. It has a thin layer of mayonnaise smeared on both slices and comes with a lot of filling. The filling, e.g. mushroom and ham, is always stacked up like a little hill so that it’s very high in the middle and very low on the sides.

My favourite topping has always been ham (prosciutto) and mushrooms. In fact, I ate a tramezzino with this particular topping combination a few weeks ago when we went to Venice. Still LOVE It. To be fair, it’s also one of my favourite pizza topping combinations so I am bound to love it. Do you love mushrooms as well? I couldn’t stand mushrooms when I was pregnant a few years ago and it took me a while to get back into loving them again.

But anyways, for my tramezzini, I wanted to create a different kind of filling and since I absolutely love zucchini, it made so much sense to incorporate it. Zucchini is probably one of my top three favorite vegetables. I love it grilled, fried, in pasta, in rice, in a soup, as a sauce…in all forms really! It’s such a versatile vegetable and gets such a nice and almost… creamy texture when grilled or roasted.

I tried to recreate the traditional Venetian tramezzini which is why the ham is mostly placed in the middle and not so much on the sides of the sandwich. If you prefer it differently, feel free to spread your ham evenly across the whole sandwich. I prefer it stacked in the middle because due to the way that the sandwich is cut in triangles, you want most of your filling in the middle anyways.

Obviously this is a really easy recipe but it’s so juicy and flavorsome and REALLY tasty! I have made those tramezzini a few times lately for lunch for my husband and me and he also loves them a lot. Make sure to use my homemade mayonnaise when you make this!

Grilled Zucchini & Ham Tramezzini

Instructions

  1. Cut your zucchini into medium-thick slices. Heat olive oil in a pan at medium heat. Place your zucchini slices into the pan and sprinkle lightly with salt. Fry on each side for about 3 minutes until soft and slightly browned. Let cool off for about 10 minutes. 

  2. Cut the crust of your slices of bread or toast. Lightly smear about 1.5 tsp of mayonnaise on one side of each slice. It should be a thin layer of mayonnaise!

  3. Top with about 9 slices of fried zuccchini. Place two slices of ham in the middle of the sandwich. 

  4. Cut the sandwich into triangles. Enjoy! 

Note

  • Bread: in Italy you get a special tramezzini bread which is slightly sweet and very soft. If you cannot get that, use soft white bread and white toast and cut the crust off.
  • Ham: I like using rosemary ham for this recipe because it adds a nice extra flavor kick. You can use any other ham as well though.
