Super Creamy Avocado Dressing

My first taste of an avocado based dressing was a few years ago. Back then, my little boy and me used to go to a weekly playgroup for toddlers and the mums took turns to bring lunch. One time one of the mums – who happened to be a vegan – brought a really tasty green dressing alongside a big salad. And I was SO in love with the dressing! When I asked her how she had made it (spill your secrets!!), she mentioned avocado and herbs. How fascinating!

I never had something like that dressing since then and forgotten all about it. But recently all of a sudden I remembered that dressing and wanted to try to create something similar. My recipe for this Super Creamy Avocado Dressing contains lots of great things - among them is fresh coriander! I just LOVE coriander (or cilantro in the US) so so much! In my opinion, there can never be enough coriander!

The rest of the ingredients are easy enough. Ripe (but definitely not overripe) avocado, coconut milk, water, lime juice and spices. And obviously lots of coriander. The dressing is also very easy to make. After roughly chopping the coriander, you add it and all the other ingredients to the blender and blend until all is super smooth.

Pour it over a mixed salad and enjoy! I like it over a mix of lettuce, peppers, tomatoes and cucumbers. That salad is a wonderful side salad to so many dishes. Sandwiches, grilled meat or fish, potato wedges... it goes with anything. And it's so so good!

Ingredients
  • 1/2 avocado
  • 1/2 cup coconut milk
  • 1 bunch of fresh coriander
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 3/4 cups water
Instructions
  1. Wash and chop your fresh coriander. I like using the stems as well! 

  2. Add to a blender with all the other ingredients and blend until smooth. Enjoy!
