Roasted Pepper & Garlic Mayonnaise

This super flavorful Roasted Red Pepper & Garlic Mayonnaise will become a staple in your fridge! Making your own mayonnaise is so easy and quick and adding roasted pepper and garlic gives it the extra flavour push. No more store bought mayonnaise full off additives!

Roasted Pepper & Garlic Mayonnaise Recipe

I am a huge lover of sauces and condiments. My ideal dish would be one that comes with about ten different dipping sauces! And come one, what’s the best vessel for a sauce? A potato wedge! Or fries! Yum! So when my husband went camping with all of our three boys a while back, I knew I wanted to make homemade oven fries for my relaxed dinner that night. And what better to serve it with than several sauces?

So that was basically my dinner that night. Fries and three kinds of sauces. There was homemade guacamole (does anyone else think that the store-bought kind just tastes horrible??), a spicy dip and then this. Roasted red pepper and garlic mayonnaise. SO good! The smell of the roasted peppers in the oven alone made me drool a little bit.

If you have never made your own mayonnaise, this is the perfect recipe to show you how fast and easy it is. All you need is a hand-held blender stick, a measuring jug and a handful of pantry / fridge staples that you will definitely have at home. If you don’t have Dijon mustard (which we ALWAYS have to have in our fridge because it’s my absolute favourite mustard) you can also use another kind of mustard. It is however better to use one that is stronger in flavour and not too mild.

Once you’ve added all your mayonnaise ingredients to the measuring jug, you just blend until your mayonnaise starts to form. Which will take about 5 seconds. The whole process of making your own mayonnaise is about 2 minutes. No more buying mayonnaise at the store with lots of added ingredients that nobody needs. This is the real thing! You can also stop now and just enjoy your homeade mayonnaise. But we’re still going to add our beautiful, amazingly smelling roasted red peppers and garlic.

Once you’ve added your blended roasted pepper and garlic mixture to your homemade mayonnaise and whisked all together, you get this amazing colour. So pretty!

  1. Pre-heat your oven to 180°C (356°F). Cover a baking tray with parchment paper. 

  2. Seed your bell peppers and cut them into pieces. Place them on the baking tray together with the unpeeled garlic cloves. Mix with olive oil and salt. 

    The garlic cloves shouldn't be too small or they will burn.
  3. Bake at 180°C (356°F) for 35 minutes until the peppers are soft and a little caramelized. 

    Let cool off. 

  4. In the meantime, place your egg, Dijon mustard, salt, white vinegar and sunflower oil into a measuring jug. 

  5. Using a handheld blender stick, press on full power until the mixture starts to get creamy. Move slowly upwards and mix until everything is blended. The mayonnaise should be thick and creamy. It will make about 1 cup. 

    If your mayonnaise isn't thick, add a bit more oil but slowly.
  6. In another measuring jug or using a regular blender, blend your peeled garlic cloves and roasted peppers until all is smooth. This makes about 1/2 cup. 

  7. Mix your 1/2 cup of pepper garlic mix with your 1 cup of mayonnaise. Whisk together until all is combined. Enjoy!

Note

Sunflower oil: it's important to use sunflower oil when you make mayonnaise. Using e.g. olive oil will give your mayonnaise a bitter taste.
