Gluten-free Sweet Potato Crackers

These gluten-free, vegan sweet potato crackers are full of great ingredients! Perfect for snacking or giving to your kids, they're full of flavor and so delicious!

Are you a fan of crackers? I absolutely love crackers! Anything crunchy salty actually. Germany is not exactly known for its selection of tasty crackers though... It's not really a thing here! In the past, I have stocked up on some of the crackers I like when visiting other countries. But we have done very little traveling outside of Germany since the beginning of the pandemic! And anyways, I now try to avoid wheat products if possible so I was looking for a tasty alternative. These are definitely it!

In fact, these sweet potato crackers are the absolute flavor explosion! When I made them for the first time, my husband and son just got back home from a trip to the playground. The crackers were just out of the oven cooling off and they commented on the delicious smell in the flat! I gave them some to try and they gobbled them up in no time and asked for more. I get it though, they're super moreish!

I know, they don't look perfect but that's the thing about homefood food. They don't have to be! Getting the thickness of the crackers right is a little bit tricky. If you spread them too thin, they might have a few cracks. And if you spread them too thick, they will still have a bit of a chew to them. I've made them a few times since (and will make them again today!) and it just takes a little bit of practice and patience. And definitely an offset spatula!

Speaking of patience, these crackers take some time to make. I roast my sweet potato in the oven but I read here that you can also use an airfryer! I haven't tested it yet but it seems to cut the time in half so it's definitely worth looking into it if you own an airfryer. And then the crackers itself also still need to bake for 45 minutes. All worth it though when you take your first bite of deliciousness!

I love that these delicious crackers are gluten free and vegan. They contain lots of great ingredients like flax seeds, almond meal and nutritional yeast. And lots of spices! I love snacking on them and giving them to my 5 year old, knowing that they're full of good stuff.

Description

These gluten-free, vegan sweet potato crackers are full of great ingredients! Perfect for snacking or giving to your kids, they're full of flavor and so delicious!

Ingredients
  • 1 sweet potato (370g / 0.8 pounds)
  • 1.5 tablespoon flax meal
  • 1/2 cup almond meal
  • 1/8 cup nutritional yeast
  • 1/8 cup flax seeds
  • 1/4 teaspoon ground rosemary
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt
  • olive oil
Instructions
  1. Pre-heat oven to 180°C (356°F). Cover baking tray with baking paper. 

    Pierce the sweet potato with a fork or a knife all over and roast at 180°C (356°F) for about 1 hour 10 minutes until soft on the inside. Remove from the oven and lower the temperature to 150°C (302°F).

  2. Let cool off a bit, then add to a blender and blend until smooth. 

    Add to a bowl and mix with flax meal, ground rosemary, almond meal, nutritional yeast, salt, garlic powder and flax seeds. Mix well! 

  3. Spray olive oil on a small baking tray. Spread the mixture on the baking tray and try to spread it as thin as possible! This can be easiest achieved by using an offset spatula.

    Bake at 150° (302°F) for 40 to 45 minutes.

  4. Take out of the oven and cut into crackers when still hot and a bit soft. Let cool on the tray for 10 minutes, then move the individual crackers onto a cooling rack. Enjoy!
