Olive Pesto, Chorizo & Cheese Rollups

These rollups are super delicious!! Homemade olive pesto, spicy chorizo slices and cheese make the perfect combination! So crispy and flavorful that you will want to eat the whole batch!

These incredibly delicious (and trust me, very addictive) rollups are the perfect snack. They're crunchy, have LOADS of flavour and you can eat them with one or two bites. And grab some more afterwards! And when I first made them, it was out of necessity to use up some ingredients in the fridge! Sometimes these experiments create the best dishes!

After I made a big batch of mini meat pies, I still had a whole roll of puff pastry dough leftover. And some chorizo slices from making pizza, some olive pesto and slices of cheese. Since I just wanted to use everything up, I didn't even write down the amounts! But the resulting rollups were SO delicious that I just had to recreate the recipe!

This time I made the olive pesto myself – half out of necessity because I had used mine up but also so that you guys can also make the rollups! I used more chorizo and added grated cheese instead of sliced cheese so it spreads more evenly. The cheese also holds everything together nicely when baked. So crispy and delicious!

I made the olive pesto using green Chalkidiki olives. They are one of the big green Greek kinds and have a lovely taste! You can use other green olives as well. Other than that, I used lemon juice, capers, parmesan cheese, almonds, dried oregano and olive oil. Make sure you don't blend it for too long since you want the pesto to be a little bit chunky still and not all smooth.

After spreading the pesto evenly over the rolled-out puff pastry sheet, you cover the pesto layer with chorizo slices. Here in Germany, chorizo comes in thin slices like peperoni or other salami. If you can't get it like that, cut the chorizo into slices as thin as possible. Next, sprinkle the cheese on the chorizo slices and roll up the puff pastry. You then cut the whole roll into slices and bake them.

The smell filling your flat will be HEAVENLY when they bake!! Try not to grab your first one when they're straight out of the oven and burn your mouth (like me)...

Ingredients
  • 1 sheet of puff pasty (about 1/2 pound)
  • 80 grams chorizo slices
  • 1/2 cup grated cheese
  • 1 cup green olives (Chalkidiki type)
  • piece of parmesan cheese (ca. 4 cm long, 2 cm wide)
  • 1/2 teaspoon lemon juice
  • 1.5 tablespoon capers
  • 4 tablespoons olive oil
  • 1/4 teaspoon dried oregano
  • 10 almonds
Instructions
  1. Pre-heat oven to 180°C (356°F). Cover a baking tray with parchment paper. 

  2. Add olives, parmesan cheese, lemon juice, capers, olive oil, oregano and almonds to a blender and blend until its's a chunky / smooth mixture. 

  3. Roll out the sheet of puff pastry. Spread 7-8 tbsp of the olive pesto all over the puff pastry. 

    You will probably have a couple tbsp of leftover pesto.
  4. Cover the pesto with slightly overlapping slices of chorizo. Sprinkle the grated cheese on top of the chorizo. 

  5. Roll up the puff pastry lenghtwise. Seal the edges by pressing them against the pastry dough. Cut into thin slices and put them on the baking tray. 

  6. Bake at 180°C (356°F) for 20 minutes. Let cool on a cooling rack for 10 minutes. Enjoy!

Note

This makes about 25 rollups. Serving size is for 6 people if every one only eats a few.
