The most addictive Cherry Almond Cake

Cherries are on sale everywhere these days and they are among my favourite stone fruit! This Cherry Almond Cake is healthy and refined sugar free (and if you replace the eggs also vegan)! So healthy indeed that you could have a slice for breakfast.

Cherry Almond Cake Recipe

Let me tell you about this cake. THIS CAKE! I have made it several times in the past few weeks because it gets eaten up so quickly. It is so yummy! My family loves it and I don't mind them eating it cause it's got lots of great ingredients.

This cherry almond cake has got a lovely crumbly texture. It's nutty yet fruity and slightly moist when you bite into one of the many cherries hidden in the cake. I think when autumn comes, I'm going to make a similar version with plums instead of cherries. That would for sure be lovely too. The almonds on top give it a really nice crunch (so don't omit them!)! I just LOVE it.

You really don't need a lot of ingredients. I find it's quite simple. If you're used to paleo baking, then you most likely have those in your pantry anyway.

Now, this recipe isn't paleo because I use oat flour but the other ingredients are often used in paleo cooking. You will need coconut oil, coconut sugar, almond meal, oat flour, eggs, fruit etc. - those are the main ingredients.

And don't worry, you can't taste the coconut at all. But then again I love all things coconut (which you might have realized already if you've been following my blog) so I might not be the right person to ask. Coconut is just such a wonderful versatile ... fruit? Is coconut a fruit?

I'm using almond meal in this recipe and not almond flour. Almond meal is made from raw almonds while almond flour is made from blanched almonds. It's also lighter in color and has a finer texture.

I prefer almond meal because it's a bit coarser. And to me, almond flour tastes more like marcipan which I strongly dislike. I love almond products though! It's just marcipan that's in my bad books. Do you like marcipan?

If you want to use almond flour instead of almond meal, you can substitute the two products 1:1. Feel free to let me know how it turns out if you decide to do that! You could potentially also substitute the almond meal for other nut flours but I haven't tried that.

Also, if you don't have oat flour in your pantry, you can easily make it yourself. I just blitz the amount of oats required in the recipe in my blender until they resemble flour. Voila! You have just made your own oat flour. Now pat yourself on the back and make this cake.

Straight out of the oven, the smell is so enticing! You just wanna take a spoon and dig in. But rather wait until it's cooled off a bit. Trust me, it'll be even better.

Now, a slice of this Cherry Almond Cake would sure be lovely with some ice cream scooped on top. Or coconut whipped cream. Or even some yogurt! Yum! However, it is super yummy on it's own as well because... well... cake! Are you a cake person?

Ingredients
  • 1/4 cup coconut oil
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 cup oat flour
  • 1/2 cup almond meal
  • 1 pinch salt
  • 2 teaspoons baking powder
  • 1.5 cup cherries (pitted)
  • 2 tablespoons almond slivers
Instructions
  1. Pre-heat your oven to 180°C (356°F). Put parchment paper into a brownie form. 

  2. Mix coconut sugar and coconut oil together. 

    Add the eggs and mix all. 

  3. Mix oat flour, almond flour, baking powder and salt together. 

  4. Fold dry ingredients into wet ingredients. 

  5. Wash, pit and half the cherries. Add to the mixture and fold in.

    Pour everything into the brownie form. Sprinkle amond slivers on top.

    Bake for 25 mins at 180°C (356°F) or until an inserted toothpick comes out clean. Let rest in the form for 10 minutes and then let it cool off on a cooling rack. Enjoy!

  • 1.5 cups of cherries = 200g of cherries
  • serves 6 (large slices) or 9 (small slices)
