Watermelon Pancakes – how fun!

It’s watermelon season and you bought too much watermelon? Here’s a new fun way to enjoy watermelon for breakfast! Dairy free and refined sugar free, this is such a great wat to start the day!

Watermelon Pancakes Recipe

Imagine this: you open the fridge and there’s a whole watermelon in there and nobody wants to eat it! Not in your house? Lucky you! In my house, that’s often the case. How did I get a kid who doesn’t like watermelon?? Yup, my son does not like watermelon. Not even when he was a baby.

On the other hand, I love watermelon! But can I eat a whole watermelon mainly by myself? Nope. My husband and my stepsons will occasionally eat some of it but somehow I am often stuck with at least half a watermelon just lying aorund in the fridge waiting to be eaten (seriously the case right now). So one morning I thought about what I could do with all that leftover watermelon. I thought of the usual recipes I have seen around – watermelon slushie, watermelon salad…all great recipes but nothing really appealed to me. And then it came to me: why not turn it into a pancake!

It was a morning where my 5 year old decided to randomly get up at 5:30 am (yikes!) and I had time to make “proper” breakfast. We normally just do toast and/or muesli since there isn’t that much time before going to kindergarten. So when I mentioned pancakes, my son was all for it! He might not like watermelon but watermelon pancakes is a different story apparently! In fact, he liked them so much he asked me if we can make some for all the kids at kindergarten!

And that’s what we did! There was still plenty of watermelon left in the fridge and if you look at my recipe further down, you’ll see that you really don’t need much watermelon for a few pancakes. So that morning I ended up making 35 (!) watermelon pancakes. And the kids at kindergarten ate them all up sooo I think they were a hit!

I put chocolate chips in the watermelon pancakes I made for my son’s kindergarten but I actually prefer them with the chocolate chips sprinkled on top instead. So when I made them again for you guys, I put the chocolate chips on top. My son liked them either way so just go with your preference! Just note, if you DO add chocolate chips to the watermelon pancakes, you have to either push them into the batter that is already in the pan or add a little bit more batter on top. Otherwise they burn easily when flipped onto the side that contains the chocolate chips.

These pancakes are so simple to make, it’s really just a few steps. Blend watermelon, add your wet and then your dry ingredients and fry some of the batter in a hot pan. Top with syrup or whatever topping you like and you’re done! Since they’re quite mild in flavour, they definitely benefit from the added sweetness so I highly recommend adding syrup. Plus, syrup makes everything better…

  1. Cut a wedge of watermelon into pieces (don't use the peel). A quarter of a small watermelon was about 1.5 cups for me.

  2. Put the pieces in a blender and blend until smooth.

    My watermelon was a seedless one and only had a few of the soft white seeds. If you're using a watermelon with lots of black seeds, I suggest to strain the mixture. 
  3. Add the mixture to a bowl. Mix spelt flour, baking powder, baking soda and soda in another bowl.

  4. Add the egg to the blended watermelon and whisk. Add the the flour mixture to that and whisk until all is smooth.

  5. Heat up a teaspoon of coconut oil in a pan at medium heat. Once the oil is hot, add 1/4 cup of the pancake batter. Wait about 45-60 seconds until bubbles appear at the top (it should look like on the photo), then flip.

  6. Wait about 20-25 seconds and remove the pancake from the pan. Repeat the steps until all the batter has been used up.

  7. Top the pancakes with syrup (I like to use agave nectar but any kind of syrup will do) and - if you like - chocolate chips. Enjoy!

Note

  • Since these pancakes have no additional sweetener in the batter, I highly recommend pouring syrup on top.
  • 1 serving = 1 pancake
