Vegan Apple & Cinnamon Oatmeal

This vegan caramelized apple & cinnamon oatmeal tastes like autumn in a bowl! It's healthy, refined sugar free and so so yummy! It's also kid approved and super easy and quick to make.

Don't you just love a warm breakfast when it's cold outside? During summer, I really crave a refreshing smoothie bowl but now that we're already down to very low temperatures here in Germany, I just need something warm to start off my day. And what better to start it than by eating a steaming hot bowl of oatmeal?

Oats are so awesome. I love using oats and oat flour in porridge but also in baked goods. They are very filling and really good for you. And let's not forget, they taste great. In this recipe, I'm using quick cooking or porridge oats since they cook really fast. And I like the super soft texture of quick cooking oats.

This oatmeal is super simple. You add boiling water to the oats and wait for 5 minutes until all the water has been absorbed. Then you add almond milk and date syrup and boil the oats for another 5 minutes. Done. And yes, I'm using date syrup AGAIN. I just love that stuff!

Feel free to use dairy if you're not vegan or if you don't have plant milk at hand. I just prefer it with almond milk. And if you wanna have EXTRA creamy oatmeal, I suggest you try using oat milk (Barista style). Barista oat milk has added fat so it foams up beautifully for coffee and such. So if you make your oatmeal with it, it gets super creamy.

Apple and cinnamon go so well together as flavors and they bring out this instant autumn feel in me. Something about that flavor combination just reminds me of colorful leaves and colder weather, warm socks and afternoons spent reading on the couch. Do you love reading as much as I do? Like a LOT?

By frying the apple together with coconut sugar, cinnamon, a bit of water and a little bit of coconut oil you get that lovely caramelization you want. Make sure you cook the mixture down until most liquid is absorbed. The coconut oil will stop the apple from sticking to the pan.

After the apple is caramelized and the oatmeal is cooked, all that's left to do is combine the two. Top your oatmeal with all that lovely fragrant apple mixture and dig in. So so good! My mouth is watering just thinking about it..

Description

This vegan caramelized apple & cinnamon oatmeal tastes like autumn in a bowl! It's healthy, refined sugar free and so so yummy! It's also kid approved and super easy and quick to make.

Ingredients
  • 1 apple
  • 1 + 1/4 cup water (1 cup for the oatmeal, 1/4 cup for the apple mixture)
  • 1 tablespoon coconut sugar
  • 1 teaspoon coconut oil
  • 1/8 teaspoon cinnamon
  • 1/2 cup quick cooking oats
  • 1/2 cup almond milk
  • 1 pinch salt
  • 1 tablespoon date syrup
Instructions
  1. Mix your quick cooking oats with 1 cup of boiling water and the pinch of salt. Set aside for 5 minutes. 

  2. When the 5 minutes have passed, add almond milk and date syrup to the oats and cook for 5 minutes on medium heat until creamy. Stir every now and then to make sure they don't stick to the bottom of the pot. 

    For extra creamy oats, use Barista Oat Milk instead of almond milk.
  3. Peel and core your apple and cut it into small pieces. Add to a pan on medium heat together with 1/4 cup of water, coconut oil, cinnamon and coconut sugar. 

  4. Fry the apple in your pan until it's soft and slightly caramelized. This should take between 5 and 10 minutes.

  5. Pour the oats into a bowl and top with the apple mixture. Enjoy!
