Green Smoothie Bowl Recipe

Do you remember when you saw Green Smoothies everywhere? Everyone seemed to drink one for breakfast and so did I! I actually really liked it and for a few months (probably in summer) I had one for breakfast every morning. It is a really nice concept because by adding a banana and peanut butter, you're basically masking the taste of spinach while drinking something that's really good for you.

However, I'm a big fan of actually eating my breakfast instead of drinking it. So eventually I stopped having Green Smoothies. But now I can have them again - just in this spoonable form! I promise you, it tastes exactly like the regular green smoothie! But you can eat it with a spoon instead of drinking it. And you can top it with whatever you like! Toppings are the best!

This Green Smoothie Bowl is also packed full of vegetables so you're already fueling your body with lots of important nutrients for the day during breakfast. And in case you're worried - no, you cannot taste the frozen cauliflower rice AT ALL. I love using frozen cauliflower rice in a lot of my recipes - if you haven't already, I highly recommend you try my Salted Caramel Smoothie Bowl on a hot day or my Chocolate Cauliflower Porridge on a cold day. I eat those for breakfast all the time.

The texture of the smoothie bowl is nice and thick so you can really eat it with a spoon. The smoothie bowl is not very sweet but for me it's definitely sweet enough. I am not a fan of overly sweet things anyways and definitely not for breakfast. If you feel like you need an additional sweetener, try adding some agave nectar or maple syrup. Or you balance it out with your toppings by adding a sweetened granola.

This recipe contains so many amazing ingredients. Lots of spinach, banana, cauliflower rice, peanut butter and almond milk. It's vegan and refined sugar free and really good for you! And it tastes great - what more would you want for your start into the day?

Description

This Smoothie Bowl is packed full of vegetables while tasting like a dessert! You will love this spoonable Green Smoothie - the perfect breakfast to fuel you for the day!

Ingredients
  • 1 large frozen banana (see notes)
  • 1 cup fresh baby spinach (packed)
  • 4 small ice cubes
  • 1/4 cup almond milk
  • 1 cup frozen cauliflower rice
  • 1 tablespoon peanut butter (heaped)
  • crunchy low-sugar granola (optional)
  • roasted peanuts (optional)
Instructions
  1. Take the banana out of the freezer (if using a whole banana) and wait for 5 minutes so that it's easier to handle. Then peel it and cut into slices. (see notes)

  2. Add ice cubes, almond milk, spinach and peanut butter to the blender and blitz it all a few times.

    Don't worry, it will look a bit like a green slightly chunky mess at this point but it will all come together fine!
  3. Add the frozen cauliflower rice and blitz a few times. Add frozen banana slices and blend until all is smooth. Depending on the strength of your blender or mixer, you will need to push the smoothie bowl mixture down in between.

  4. Pour into a bowl and top with crunchy low-sugar granola, sliced banana and roasted peanuts. Enjoy!

Note
  • Bananas: the bananas should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe. I like to freeze it whole and then wait a few minutes after removing it from the freezer. Then I make a cut down the middle lengthwise and cut it into slices. It's easy to peel then.
