Salted caramel is one of those flavours that work just so well. Whoever came up with this, is a genius! I looked it up and apparently, salted caramel was first created by a chocolatier called Henri Le Roux more than three decades ago. How fascinating! The flavours combined work just so well. I generally love the combination of salty and sweet. Do you love salted caramel?

My husband is an equally big fan of salted caramel (any caramel to be honest) and I've been working on perfecting this recipe for a while. His standards are high so I always made sure to let him taste the newest version of this Salted Caramel Smoothie Bowl, adding more salt or sweetness. But now it's finally perfect!

The coconut sugar in this recipe isn't strictly necessary so if you feel that bananas and dates will already send you into a sugar high, then omit the coconut sugar. I like adding it because it gives the mixture such a nice caramel flavour. I generally love working with coconut sugar and only very rarely use regular white or brown sugar at this point. The smell of coconut sugar alone is just so so yummy!

Adding the cauliflower rice basically means you're eating a bowl of vegetables for breakfast. So it's healthy! Right? Well, I guess as healthy as it gets, especially if you top it with a sugar-free or low-sugar granola. I prefer doing that anyways because the smoothie bowl is sweet enough and doesn't need any extra sweetness.

This smoothie bowl is everything I want in a breakfast. It's sweet and salty, it's creamy and refreshing and it's crunchy if you add the toppings. Yum! And let's not forget, vegan and healthy. So a bowl of goodness!

Description

You love salted caramel ice cream? How about having it for breakfast? Here's a healthy, vegan and refined-sugar free version that will give you a boost to start the day! It tastes just like ice cream but healthier...

Ingredients
  • 4 dates
  • 1 large frozen banana
  • 1 tablespoon cashed butter (heaped)
  • 1/4 teaspoon salt
  • 1/2 cup almond milk
  • 4 small ice cubes
  • 1 tablespoon coconut sugar
  • 1 cup frozen cauliflower rice
  • cacao nibs (optional)
  • crunchy low sugar granola (optional)
Instructions
  1. Soak 4 dates in hot water for 10 minutes. Remove from the water (you won't need the soaking water) and cut into small pieces. Add to blender.

  2. Add cashew butter, salt, almond milk, ice cubes and coconut sugar to the blender. Blitz for a few seconds.

  3. Add frozen cauliflower rice and blend until fairly smooth.

  4. Add frozen banana to the mix and blend until all is smooth.

  5. Pour into a bowl and top with cacao nibs, crunchy granola and if you like, more banana. Enjoy!

Note
  • Cauliflower rice: If you cannot get frozen cauliflower rice in your area, you can also grate a fresh (the fresher, the sweeter the taste!) cauliflower finely and freeze it in portions. Here's a good explanation on how to make cauliflower rice yourself. 
  • Banana: the banana should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe. I like to freeze it whole and then wait a few minutes after removing it from the freezer. Then I make a cut down the middle lengthwise and cut it into slices. It's easy to peel then.
  • Salt - I like to use Pink Himalayan salt.
