Blue Cheese, Bacon & Tomato Bruschetti

These delicious bruschetti are the perfect flavour combination. They’re creamy, juicy, salty and crunchy – all in one bite. And SO SO delicious! Enjoy them as a snack, for lunch or even better – to share with friends at a party!

Blue Cheese, Bacon & Tomato Bruschetti Recipe

I LOVE blue cheese. The stronger the better for me. I generally prefer stronger tasting cheeses like Parmesan cheese, Pecorino or Gorgonzola to the milder ones like Gouda or American Cheese. I remember already liking blue cheese as a child so when I came up with this yummy snack, I was quite excited to see if my 5 year old son had inherited the cheese genes. He’s generally into salty foods like anchovies and olives so there was a good chance he would like it!

When I first presented this dish to my tasters, I provided them with three options. Topped with cut-up tomatoes, topped with bacon or topped with cut-up peaches. They were all nice but something seemed to be missing with every option so we tried bacon AND tomatoes on top and that just hit all the right notes. It was creamy, juicy, salty and crunchy – all in one bite. And SO SO delicious!

There are a lot of different kinds of blue cheese but I love using Gorgonzola for this recipe. In particular Gorgonzola Piccante since it has quite a strong flavour which pairs so nicely with the mildness of the cream cheese. Gorgonzola Dolce (the mild one) is sweeter and creamier while Gorgonzola Piccante is firmer and crumblier. I love them both but for this recipe, I recommend a blue cheese with a stronger flavour.

One of the things I love about this dish is how fast you can make it! Imagine you have guests popping by unexpectedly and you want to serve something delicious but don’t want to leave them sitting on the couch waiting for a long time. This dish would save you for sure! Your guests would love it and the flavour explosion would have them asking for more.

Let me tell you how easy and fast this recipe is to make! You fry the bacon, cut the tomatoes and mix the cream cheese and the Gorgonzola together. Then you spread it on your slices of bread and top it with bacon and tomatoes. I know. It’s almost TOO simple. I was wondering if I should even post this as a recipe but we love it so much in my family that I just HAD to share it with you guys!

And in case you’re wondering – my son LOVED it. It wasn’t the only time I made them since and he really enjoys the flavour combination a lot. So do we. Just thinking about them right now makes my mouth water.

Instructions

  1. Cut bread into slices and lightly toast them. 

  2. Cut the bacon into pieces (or use pre-cut bacon) and fry it in a pan at medium heat until crispy. Drain extra fat. 

  3. Wash the tomatoes and cut them into small pieces. 

  4. Mix cream cheese and Gorgonzola cheese (or any other blue cheese you're using) together with a fork until all is smooth. 

  5. Spread a thick layer of the gorgonzola cream cheese mixture on to the bread. Top with a generous helping of bacon and tomatoes. Enjoy! 

Note

  • I like to use Gorgonzola Piccante but you could use any blue cheese that you like. Depending on the type, it might be more or less strong in flavour. 
  • If you're using a ciabatta that still needs to finish baking, allow enough time to cool off after. Otherwise the cheese mixture will melt on the warm bread slices.
