This easy to make delicious chicken dish has to be marinated for a few hours in advance and is then roasted to perfection until caramelized and juicy. Enjoy it with rice, mashed potatoes or any side dish you like!
You guys, the flavors in this chicken dish are so perfect! I've made it several times in the last few months and it's always a huge hit - everyone loves it! And it honestly couldn't be easier to make! Just remember that you need to marinate the chicken drumsticks for a few hours before roasting them.
The marinade comes together super fast. Add honey, Aceto Balsamico, olive oil, salt, powdered garlic and smoked paprika to a bowl and whisk together well. Once it's all mixed, add the chicken drumsticks and let them marinate in the fridge for a few hours. So easy, so yummy! You can either let the chicken drumsticks marinate in a bowl or in a zip lock bag. I didn't have any zip lock bags so I used a bowl. Basically, both ways work!
After the chicken drumsticks have been marinating for a few hours, it's time to roast them. You need to pre-heat your oven to 180°C (356°F) and roast them for about 45 minutes until they're juicy on the inside and slightly caramelized on the outside. If you're using the whole chicken leg, you will need to roast them longer. You can always test if they're fully cooked on the inside by inserting a cooking thermometer. The internal temperature needs to be at or over 70°C (165°F) for it to be fully cooked and safe to eat.
The remaining sauce is so yummy and has a caramelized taste that is just divine! I love spooning more on my chicken or have it over rice. Or mashed potatoes. Or who am I kidding, just eating it with a spoon. Does anyone else do that? No, just me?
As you can see, this meal is super versatile. We ate it with mashed potatoes and garlicky spinach. We've had it with rice and a salad. It's great with potato wedges and fried cabbage. It really goes with any side dish you can think of and is a really great meal for when friends and family are coming over.

Mix together olive oil, honey, Aceto Balsamico, salt, smoked paprika powder and garlic powder.
Add chicken drumsticks and marinade to a 3 litre freezer bag (or a bowl if you don't have a bag) and mix together. Let marinate in the fridge for 6 hours.
Pre-heat oven to 180°C (356°F).
Add the chicken drumsticks to a casserole dish and roast at 180°C (356°F) for 45 minutes. Enjoy!
