Description

This Acai Berry Power Smoothie Bowl is packed full of goodness for breakfast. It will give you lots of power for the day and leave you super satisfied! It's vegan and refined sugar free and so good for you!

Ingredients
  • 2 large frozen bananas
  • 5 dates
  • 2/3 cups frozen blueberries
  • 2/3 cups frozen mixed berries
  • 2/3 cups almond milk
  • 6 small ice cubes
  • 1 tablespoon açaí powder
  • 2 tablespoons peanut butter
  • cacao nibs (optional)
  • crunchy chocolate granola (optional)
  • hemp seeds (optional)
  • fresh berries (optional)
Instructions
  1. Take bananas out of the freezer (if using whole bananas) and wait for 5 minutes so that they're easier to handle. Then peel and cut into slices. (see notes)

  2. Cut the dates into small pieces. 

  3. Add dates to the blender together with banana slices, frozen blueberries, frozen mixed berries, ice cubes, almond milk, açaí powder and peanut butter. 

  4. Blend until all is smooth. Depending on the strength of your blender or mixer, you will need to push the smoothie bowl mixture down in between.

  5. Pour into a bowl and top with fresh berries, crunchy chocolate granola, hemp seeds and cacao nibs. Enjoy!

Note
  • Bananas: the bananas should be ripe but NOT overripe! The banana taste is too strong if overripe for this recipe. I like to freeze it whole and then wait a few minutes after removing it from the freezer. Then I make a cut down the middle lengthwise and cut it into slices. It's easy to peel then.
  • Frozen mixed berries: I like to use a mix that consists of blackberries, raspberries and cranberries but you could use any mix you like
