Blueberry Pancake Tray Bake

Breakfast on the table for 3-6 people in 15 minutes? Yes please! This spelt pancake is full of blueberries and healthy, yet delicious! Douse it in lots of maple syrup for perfection!

Have you seen the show on Netflix where Nadiya Hussain bakes the most amazingly yummy things? It’s called Nadiya Bakes. I didn’t actually know her beforehand but found out that she was one of the winners of the Great British Bake Off! I’ve unfortunately never seen that show but would love to cause it looks like such fun! As far as I know it doesn’t stream here in Germany which is such a pity.

Anyways, Nadiya makes amazing things and one of the things she cooked in her show Nadiya Bakes is a really yummy pancake tray bake with peanut butter and jelly. I actually made it on vacation in South Africa a few months ago when there were for once enough people to eat it!

My version – which is definitely inspired by her idea – is a spelt pancake studded with a ton of fresh blueberries. The amount is great for 6 people (or 3 very hungry ones who like second helpings). The pancake itself is not very sweet. I prefer to douse my pancakes in maple syrup rather so I like a batter which is very lighlty sweetened.

And of course it needs a pat of butter! Sure, you can also eat it without the additional butter… but why would you? It makes it so much better! I also dusted it with powdered sugar for fun and looks. Not a must but again, it’s fun and my kids love it. However, by doing that, the pancake is no longer refined sugar free of course.

Instructions

  1. Pre-heat oven to 180°C (356°F). Line a brownie form with parchment paper.

  2. In a bowl, mix together eggs, milk, salt, baking soda, honey and spelt flour. 

    Fold in blueberries. 

  3. Pour the batter into the brownie form. Bake at 180°C (356°F) for 10 minutes. 

    Cut into 4 to 6 pieces. Serve topped with vegan butter and drizzled with maple syrup and / or sprinkled with powdered sugar. Enjoy!
