Oh my God, you guys! These muffins! I am so utterly in love with these super easy strawberry muffins, I cannot even tell you. They are SO perfect for strawberry season at the moment and basically I want to eat them every day from now on. Yes, that’s how much I love them. Let me just tell you, I wasn’t the only one in my family and they were gone by the end of the day.
Plus, they’re vegan too! Double win! I love recipes without dairy so while these are not exactly healthy (given that the batter contains sugar and flour), at least they’re vegan. I hope you will also love them as much as I do! They are so fluffy and packed full of strawberries. To me, they taste kind of like a big fluffy baked strawberry, if that makes any sense? SO good.
There’s a trick to making them so super fluffy. I disovered recently that if you add pudding powder to the batter, it makes the muffins super fluffy and yummy. There are many more wonderful muffin recipes coming up for you guys soon so be prepared for lots of baking sessions. Trust me, you will be tempted!
Here in Germany, you can buy unsweetened pudding powder. Which is generally perfect because I love being able to adjust the level of sweetness when I make pudding. Sometimes I also use maple syrup or other sweeteners instead of sugar.
But coming back to the muffins, the pudding powder mix I use is this one. It contains corn starch, salt, aroma and natural colorants. So not only does it give the muffins an extra kick of strawberry flavor, it also provides the beautiful pink color!
If you cannot get unsweetened pudding powder, you can either use regular strawberry pudding powder (if your mix contains similar ingredients) and reduce the sugar in this recipe or do your own mixture of corn starch. However, then you would need to substitute the strawberry aroma for something else. Maybe jam? Let me know if you experiment! But if you can get the unsweetened pudding mix, I highly recommend baking them as intended cause they are seriously amazing.

Vegan Strawberry Pudding Muffins

Pre-heat oven to 180°C (356°F). Prepare a muffin form with 6 paper muffin cups.

Add coconut oil and sugar into a bowl. Mix together with a hand-held mixer. Add the package of unsweetened strawberry pudding powder and mix in well.

Add almond milk and plant-based yogurt and mix in. Then add flour, baking soda, baking powder and salt and mix until just combined. Dice the strawberries, add to the mix and fold in.

Fill the muffin batter into the 6 muffin paper cups. Bake at 180°C (356°F) for 25 minutes or until a toothpick inserted comes out clean. Let cool off for 5 minutes, then let fully cool on a cooling rack for 15-20 minutes. Enjoy!
