Chai Spiced Baked Oats

These baked oats taste a bit like Christmas! My version is slightly gooey, yet cakey, and just delightful! It’s a little sweet but not overpowering. In short, the perfect breakfast for a cold day.

You have probably heard about the TikTok trend regarding baked oats. It has definitely been trending for a while and I can see why. It’s easy to make, delicious and hits just the right spot, in particular on a cold morning. And of course you can customize it the way you like it which is why you will find lots of different versions of baked oats online. You probably know already that I LOVE oats. I adore oatmeal for breakfast (or cauliflower porridge), I love oatcakes and oat cookies. Anything with oats tends to be awesome!

What I particularly like about baked oats is the endless possbilities! On top of being able to customize your add ins and toppings, you can also easily customize the texture of the baked oats. Are you a lover of gooey oats? Then bake it for the shortest time mentioned in the recipe (which is 18 minutes in case you were wondering). Or are you like me and you like it gooey in the center but cake-like on the outside? Bake it a couple of minutes longer. Or do you prefer cake for breakfast? Add a couple of more minutes. Easy peasy. I mean, who doesn’t like cake for breakfast?

And these baked oats are so easy to make! It really couldn’t be any easier! You just need a handful of ingredients that you have to put in a blender to make your batter. Then you add your chocolate chips or whatever you want to add into your oat batter. You pour the batter in your bowl(s) or ramekins and bake it for about 20 minutes.

I decided to use a chai spice mixture in my baked oats recipe because those spices just feel… warm to me. Does that make any sense? Here’s a fun fact: until a couple of years ago I detested cinnamon! Like I couldn’t stand it, not even the smell. And then from one day to the next I just liked cinnamon. So weird. And ever since then I have grown to really LOVE cinnamon! How does that even make sense?

And using figs together with those spices makes complete sense to me. Figs and cardamom (which is in a chai spice mixture) work beautifully together! If you don’t have a chai spice mixture at home (like me), you can easily make it yourself. Just scroll down to Notes in the recipe section and you can read about the ingredients that I used in my mixture.

Oh, and chocolate. Chocolate makes everything great. I have used milk chocolate (vegan) and dark chocolate and I like the milk chocolate a little bit more. But feel free to use whichever type of chocolate you prefer.

I have made these Chai Spiced Baked Oats several times lately and I really love them. They are so comforting and warm and I just wanna crawl into the little bowl. Speaking of little bowl, as you can see, I used two small bowls (ramekins) because I wanted to have some eggs for breakfast as well. If you’re planning on having something else on the side, this recipe makes enough for two people. Otherwise it’s one big serving.

Instructions

  1. Pre-heat your oven to 175°C (347°F). 

  2. Either make your own oat flour (see notes) or use store-bought oat flour. 

  3. Blend oat flour, banana, salt, baking powder, cashew butter, almond milk and chai spice mixture together until smooth. 

  4. Add chocolate chips to the mixture and fold them in with a spoon. 

  5. Pour the mixture into two small ramekins or an oven-proof bowl. Top with your sliced fig. 

  6. Bake at 175°C (347°F) for about 18 minutes (gooey texture), 20 minutes (gooey in the middle) or 22 mins (cake-like texture). Enjoy!

Note

  • Oat flour: you can make your own oat flour! Simply put the desired amount of oats in a blender or food processor and blend until it has a fine texture. I used rolled oats but you can use quick oats just as well.
  • Chai Spice Mixture: mix together
    • 1/8 tsp ground nutmeg
    • 1/8 tsp ground ginger
    • 1/8 tsp ground cloves
    • 1/2 tsp ground cinnamon
    • 1/4 tsp ground cardamom

      The Chai Spice Mixture is enough for 2 portions of this recipe!
