Vegan Peanut Butter Chocolate Mousse

This mousse tastes super creamy and rich and definitely as good, if not better, than a regular chcolate mousse! It’s vegan and refined-sugar free and you will want to eat both portions yourself.

I just love creamy desserts. Anything creamy that one can eat with a spoon is a big hit. Pudding, mousse, yogurt-based desserts and obviously ice cream… mmmmmhhhh so good. But I really try to avoid using or eating dairy which sometimes makes it difficult to enjoy those desserts! So I am always up for experimenting with creating something delightful that is dairy free and – in the best case – also refined-sugar free.

The base for this mousse is coconut milk. You read right, not coconut cream but coconut milk! It’s important the the coconut milk is kept in the fridge for a few hours before making the recipe though. Otherwise it will be too liquid to begin with and it takes much longer until you can enjoy your mousse.

I used date syrup as a sweetener because we generally love dates in this family. Using dates is a great way to bring sweetness to your desserts without having a blood sugar spike. Plus they have additional nutrients (as opposed to refined sugar). I also love using dates as a sweetener in all of my smoothie bowls. And date syrup is awesome for liquid-based desserts like a mousse or yogurt-based dessert because it dissolves quickly. It also has more than twice the potassium, calcium, and magnesium levels of maple syrup or honey, with up to 10 times the antioxidants. Of course, when you get a date syrup, you should make sure it’s an organic date syrup with no weird additives.

Using peanut butter adds a really nice flavor to the mousse – I generally just LOVE peanut butter!! I highly recommend using my super easy recipe for homemade peanut butter. It only takes a few minutes to make and you will have a lovely peanut butter without all the additives and sugar. If you don’t have or don’t like peanut butter, you can also add another kind of nut butter. I can imagine almond butter being fabulous as well!

This dessert is, like a lot of my recipes, really easy to make but it will sure impress your guests. Or if you don’t wanna share, it will make you very happy too! You mix coconut milk, peanut butter, date syrup and unsweented cacao powder with an electric handheld mixer until all is combined and pour it into two glasses or small bowls. Top with cacao nibs and put it in the fridge for some time. Enjoy! Topping it with cacao nibs is vital in my opinion! It adds a lovely crunch but it also cuts through the richness of the dessert and brings a necessary balance.

Oh, and in this recipe you CAN taste the coconut milk. Or so my sister says. I didn’t even think about it because I just love anything with coconut so very much! But if you don’t enjoy the taste of coconut, maybe this is not for you.

  1. Mix coconut milk, cacao powder, date syrup and peanut butter together with an electric handheld mixer until all is combined, smooth and creamy. 

  2. Pour the mixture into two glasses or small bowls. Top with cacao nibs. 

  3. Put in the fridge for at least 45 minutes. Enjoy!

Note

Peanut Butter: it should be unsweetened smooth peanut butter
